Viral Quick and Easy Crock Pot Lasagna Soup
This viral, quick and easy crock pot lasagna soup is a hit for any comfort food junkie. All of the flavors you love from lasagna packed in a hearty soup. Finish it off with a creamy ricotta mixture and you have a bowl full of heaven.
Two comfort foods in one, this crockpot lasagna soup recipe will become a favorite in your house, just like ours.

One of the hottest trends to hit the internet in the last couple of years has been something really so simple and delicious. Lasagna soup! All of the flavors you love in a hands free way of cooking.
We use the beloved slow cooker and cook up this crock pot heavenly dish. This is a meal prepper’s dream too. As you can cook the meat ahead of time and throw it all together to cook while you check other things off of your to do list. Supper is done!
Ingredients
We use all of the traditional ingredients you expect giving this the flavors you know and love. It is still very much a scratch made lasagna but also an easy recipe that gets your perfect comfort food done a whole lot easier.

Instructions
I do realize the ingredient and step list looks like a lot. You just have to trust me when I tell you that even though there are lots of little parts and pieces to doing this, is really is so much simpler than assembling a full on lasagna! Trust the process and let the crock pot do the heavy lifting.

Heat olive oil over medium to high heat. Sauté onions until soft.

Add in ground beef and brown with onions. Season with salt, pepper and minced garlic.

Drain beef mixture if needed and add to the liner of the crock pot.

Mix in tomato puree.

And a can of crushed tomatoes.

Add in tomato paste and mix well.

Pour in chicken broth.

Season with dried oregano, basil and rosemary. Cover and cook on high for 3 hours or low for 6.

In a medium size bowl, mix ricotta and mozzarella cheese.

Mix in 2 tablespoons of dried basil. Cover and refrigerate until ready to use as garnish for the soup.

With about 15 to 20 minutes left of cooking time, break up lasagna sheets.

Mix in the soup. Cover again and allow to cook for another 15 to 20 minutes.

Stir in 2 cups of shredded mozzarella cheese and mix well before serving and test noodles to make sure they are al dente.

Variations and Substitutions
While we have already substituted the starch and carb source, here are some other tasty variations and substitutions for you to try.
- Spicy – half the ground beef and use spicy Italian sausage for a little kick. Or simply add in your favorite hot sauce or red pepper flakes.
- Get your vegetables in – add a handful of spinach or even curly kale for a bit of added vitamins and minerals.

Storage
Once cooled, store in an airtight container in the refrigerator for up to a week.
This crockpot lasagna soup is a freezers dream! Freeze in a freezer safe container and it should last up to 3 months. Make the ricotta when needed just before serving. Thaw in the refrigerator and heat through in the crock pot or on the stove. Add more broth to thin if needed.

- 1/4 cup tomato paste
- 1 pound ground beef
- 1 teaspoon garlic minced

- 28 ounces tomato puree
- 15 ounces crushed tomatoes
- 2.5 cups chicken broth
- 1 teaspoon oregano
- 2 Tablespoons basil plus 1 teaspoon
- 1/2 teaspoon rosemary
- 12 lasagna noodles dried
- 3 cups mozzarella cheese
- 8 ounces ricotta cheese
Instructions

🍴 PRO TIP!
This beautiful recipe can also be done in the instant pot! Do everything to brown on the saute function, add the other items as directed. Close the lid, seal the vent and cook for 3 minutes. Allow the pressure to naturally release, stir and serve.

🗹 RECIPE FAQ’S
Once the cooking process is done, if you find it is too thick, simply thin with a bit of chicken broth. The soup will still be hot, it should not cool it off, add a bit and stir until it reaches your desired thickness.
You sure can. Simple is better. A marinara with minimal sodium and seasonings will allow you to control the flavor of the recipe. Omit the tomato puree but keep the crushed tomatoes and the tomato paste as they add body to the soup.
The pasta is what really amps up the carbs in this one. There are low or no carb options available. Hearts of palm lasagna noodles can be found in most grocery stores. As they are already cooked, you could add them at the end of the cooking process and get the same result but with fewer carbs.
