Redneck Caviar - A Fun Party Food
Tailgates, Potlucks, Sunday lunch at church, Family reunions or just a Saturday get together. All of these things are wildly popular in the South. As I am sure they are in other parts of the world. Southerners get really excited though when we get invited to a shindig where we can bring a dish.
Food competition is old in the South and it probably originated at a Church Social. It's not uncommon to hear a topic of conversation that is people buzzing about what someone brought. Whether that be good or bad, you always want to be the topic of a good who brought what conversation.
This recipe for Redneck Caviar is wildly popular so we thought we would put the old Buttered Home spin on it and show you how we make this fan favorite party fun food. We love to take a traditional appetizer and make it our own. Just like these ITALIAN NACHOS.
What is it Anyway?
As far as the name, well I have no idea. This is what we have always called it. I don't see the word "Redneck" as a derogatory term either. All my folks were Rednecks. Hard working Southerners whose necks were probably red from working in the fields or out in the heat. Why don't we squelch that notion right now. There are good Rednecks, I am proof of that!
This recipe is a hodge podge of different flavors and textures and I can guarantee you if you take it to a gathering, you probably won't have many leftovers. We take a few canned items and pair them with some fresh veggies and marinate them in zippy Italian dressing. Yeah, I know lets cut to it and tell you how to make it already!
How to Make Redneck Caviar
This is one of the easiest recipes you can make. Recipes like this are my favorite, all you do is just dump it all in a big container, cover it and let it sit and marinate.Trust me, it is so very good. Don't be put off by all of the ingredients. There is really very little prep here and the payoff is tremendous! Let's do it!
~Ingredients~
- 1- 14 oz can black eyed peas, drained and rinsed
- 1 - 14oz can black beans, drained and rinsed
- 1 - 14oz can diced tomatoes
- 1 - 14oz can sweet yellow corn, drained
- ½ cup chopped Red onion
- 1 Bell Pepper seeded and diced
- 1 - 4oz can green chilis
- 1 - 4oz can sliced black olives, drained
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1 - 16oz bottle of prepared Italian Dressing
~Method~
- In a large bowl with a lid, mix all ingredients well.
- Cover and refrigerate at least 2 hours. Best to allow to marinate overnight for flavors to meld.
- Serve with tortilla chips and watch it disappear! Enjoy!
Redneck Caviar Tips and Tricks
- Presentation - You can serve this up in a pretty dish but I am here to tell you, there really is no need. This recipe is so colorful and inviting you can leave it in the big old 25 year old Tupperware like I did and and no-one will mind. Be sure though that you do put it in a container that you can cover and that is large enough to hold all those good ingredients. I have a link to a great one at the bottom of this post.
- Veggies - You want to be sure that you dice your veggies about the same size as the other canned ingredients. Having a uniform cut on everything will insure that maximum flavor is covered in every scoop of this glorious appetizer. You want to make sure that folks get a little bit of everything scooped in their chip!
- Salt and Pepper - I know you saw it. None, zip, zilch, nada. There is no need for added salt or pepper. Your bottle of prepared Italian dressing has all of the flavor you will need. Period. Trust me on this. Just when you think you've found a recipe you can't mess up, you find that you can by adding salt where its not needed up in this one.
