Appetizers Made Fresh
When most folks think about tailgating or party appetizers, they think of heavy or fried apps like this delicious SPICY SHRIMP DIP. While there is nothing wrong with these, sometimes, it is a happy surprise to have a fresh bite of something special! This recipe is one that is a super surprise for the normal party or tailgate.
You will also find in the South, potlucks, tailgates, church socials and parties in general always become a competition of sorts. Who made what, what is the recipe, what is the neatest dish brought? All the buzz surrounding the food. We, as southern women are generally the main ones in this conversation.
So never fear, The Buttered Home is here to make you tailgate famous. And I don't mean in a "I drank too much" way either! These little bites of heaven, BLT Bites I affectionately call them, are one that will have all of the other folks talking! This recipe is so easy, it doesn't even require much elbow grease. How to Make BLT Bites
Like I said above, this really doesn't even qualify as a recipe but more of an assembly. I guess if it were a recipe is would be for the fabulous bacon aioli. Yes, the spread d'bacon. The bacon glue of life. It IS what makes this recipe so good!!
Let's get to it!
~Ingredients~
- ½ Cup Mayonnaise
- 4 oz softened cream cheese
- ½ cup crumbled bacon
- 6 slices of light or wheat bread
- Salt to taste
- 1 teaspoon minced garlic
- Pepper to taste
- 1 teaspoon lemon juice
- 8 plum or cherry tomatoes, sliced
- ¼ cup green leaf lettuce, julienned
~Method~
- Slice and julienne tomatoes and green leaf lettuce. Set aside. Cook and crumble bacon, set aside. With a small round biscuit or cookie cutter, cut out discs from bread slices.
- In a medium bowl, mix mayo, cream cheese, bacon crumbles, salt, pepper, minced garlic and lemon juice. Stir until combined and creamy.
- Spread Bacon aioli on small discs of bread. Top each disc with a slice of tomato and garnish with a ribbon of green leaf lettuce. Place on a pretty plate and serve immediately or refrigerate until ready to serve.
Tips and Tricks
- Size Matters - When you are making an appetizer for a tailgate or party, you want the perfect single bite. No-one wants to carry around something in their hand that takes multiple bites. It also means you have more room on your plate to get a little taste of everything. This is why I use my smallest biscuit cutter for this. Also, by using it, you can get 4 little BLT bites out of one slice of bread.
- Use a Sharp Knife - This little tip applies in almost any mode of cooking when you have to slice or dice any veggie. A dull knife is dangerous. Take a minute and sharpen your tool before so you won't have a mishap. It can happen in a flash. Trust me and my 17 stitch scar on the palm of my hand!
- Bacon - I love the smell of bacon cooking. But let's be real, if I am in a rush or have to throw something together at the last minute, the real bacon pieces you find at the market are worth their weight in gold. There is no shame in using them in this recipe either. If your house is like mine when you are trying to do 4316 things to get gone in a flash, it will pay to use them. Some of them can be kinda big so use that freshly sharpened knife and run through them to get them as small as possible.
