Bacon Lettuce Tomato Bites

Ingredients

  • 1/2 cup mayonnaise
  • 4 ounces softened cream cheese
  • 1/2 cup crumbled bacon
  • 6 slices light or wheat bread
  • salt to taste
  • 1 teaspoon minced garlic
  • pepper to taste
  • 1 teaspoon lemon juice
  • 8 plum or cherry tomatoes sliced
  • 1/4 cup green leaf lettuce julienned

Instructions

  • Slice and julienne tomatoes and green leaf lettuce. Set aside. Cook and crumble bacon, set aside. With a small round biscuit or cookie cutter, cut out discs from bread slices.

  • In a medium bowl, mix mayo, cream cheese, bacon crumbles, salt, pepper, minced garlic and lemon juice. Stir until combined and creamy.

  • Spread Bacon aioli on small discs of bread. Top each disc with a slice of tomato and garnish with a ribbon of green leaf lettuce. Place on a pretty plate and serve immediately or refrigerate until ready to serve.
