Southern Deviled Egg Pasta Salad

We have a fabulous pasta salad recipe for you today! Our SOUTHERN DEVILED EGG PASTA SALAD combines all the things you love about deviled eggs and regular old pasta salad and makes them even better. Get ready to dig into a nice, cool, delicious pasta salad that you are going to adore!

First off, we’re not going to make your normal, pretty little deviled eggs. We’re going to do something totally different with them! You’ll know it’s a deviled egg salad for sure, but this combo with the rotini pasta and creamy base makes for something different and amazingly tasty!

Ingredients

Eggs, pickles, mustard, mayo and PASTA! How much better can you get than that?

What You’ll Need

  • Hard boiled eggs – these are great to get done ahead of time!
  • Rotini pasta – any pasta will do but we love rotini to soak up that dressing!
  • Mayonnaise and Dijon mustard – the base for the dressing.
  • Onion and Dill pickles- a must for any southern deviled egg.
  • Salt and pepper– simple, effective flavors.
  • Garlic powder, smoked paprika and chives – all great flavor components.

Instructions

You will not believe how easy this is to make! And you really won’t believe the flavor combo! Let’s do it!

Halve the boiled eggs and place the yolks in a bowl.

Roughly chop the whites and set aside.

Add mayonnaise to the egg yolks.

And dijon mustard.

Add in just a little dill pickle juice, maybe a teaspoon.

Add in smoked paprika and garlic powder.

Season with salt.

And Pepper. Mix to combine and break up yolks.

Fold in chopped onion and chopped dill pickle.

Fold in the reserved chopped egg whites.

Gently add in the pasta and mix to coat with dressing.

Sprinkle a bit more smoked paprika over the top.

Cover and refrigerate for at least 30 minutes.

Substitutions & Variations

With this recipe, I can think of a few customizations to help get you going.

Pasta – You don’t have to stick with Rotini. Penne and farfalle will work well!
Pickles – You can certainly use relish for this recipe, but we like the slightly larger chopped baby dill pickles.
Seasonings – We love this recipe’s flavor balance, but feel free to vary the amounts to your particular taste.

Make Ahead and Storage Tips

Make ahead of time:  You can boil the eggs and cook your pasta the night before, and get it together quickly the next day!
Storage: Your pasta salad will keep in the fridge for 3 to 5 days in a sealed container.

Southern Deviled Egg Pasta Salad

Our SOUTHERN DEVILED EGG PASTA SALAD combines all the things you love about deviled eggs and regular pasta salad and makes them even better. Dig into a cool and delicious pasta salad that you will adore!

Ingredients

  • 12 ounces rotini pasta cooked, rinsed and drained
  • 8 eggs hard boiled
  • 1.5 cups mayonnaise
  • 2 tablespoons dijon mustard
  • 3/4 cup baby dill pickles chopped plus a bit of the juice
  • 1 cup onion chopped
  • 1.5 teaspoons salt plus extra for pasta water
  • 1.5 teaspoons garlic powder
  • 1 teaspoon smoked paprika plus extra for garnish
  • 1/2 teaspoon black pepper
  • fresh chives chopped for garnish

Instructions

  • Cook pasta according to package directions for al dente. Rinse, drain and set aside. Hard boil eggs. Cool, peel and halve each egg. Place the yolks in a medium bowl.
    12 ounces rotini pasta, 8 eggs
  • In the bowl with the yolks, add in mayonnaise, dijon mustard, a tablespoon of the dill pickle liquid, salt, garlic powder, pepper and the smoked paprika. Mix well breaking up the yolks.
    1.5 cups mayonnaise, 2 tablespoons dijon mustard, 1.5 teaspoons salt, 1.5 teaspoons garlic powder, 1 teaspoon smoked paprika, 1/2 teaspoon black pepper
  • Rough chop the egg whites and add them to the dressing. Add in the chopped onion, chopped pickles and cooked pasta. Gently fold in to combine and make sure everything is coated.
    3/4 cup baby dill pickles, 1 cup onion
  • Spread evenly in a bowl and garnish with a bit more smoked paprika and chopped chives. Cover and chill for at least 30 minutes. Serve cold.

*PRO TIP* –  Cook your pasta and boil your eggs the night before to mix this up in a flash. If pasta is stiff, just add about a teaspoon of olive oil to loosen

🍴 PRO TIP!

This pasta salad is even better if you chill it for about 30 minutes to an hour, but it is great right when you’re done and ready to eat immediately! But feel free to tightly cover it and pop it into the fridge, even for overnight. If it happens to dry out a little overnight, you can a a little bit of mayo, mustard or pickle juice to dress it up.

Can you freeze the pasta salad?

We do not recommend freezing this dish, as the pasta won’t withstand the freezer and will likely get pretty mushy.

What’s the best way to keep this at a good temperature?

After a couple hours on the table, you may want to pop this back in the fridge or perhaps rest the bowl of pasta salad in a larger bowl of ice to keep things nice and cool.

Why does my pasta salad seem too salty when I first taste it?

Once it sets up for a bit, this will lessen. Give things a little while and it will certainly get even better! Like I mentioned before, the longer it sits, the better it is!
