Mexican 7 Layer Dip

Today we have a little something for you that we like to call “summer in a layered dip!” It’s our absolute favorite MEXICAN 7 LAYER DIP, and we can’t wait to share with you how easy and delicious it is to make! The nice, fresh flavors coupled with lime juice and cilantro will make your summer day!

I really love making this in a clear casserole dish. You can certainly make it in a bowl, but it is just so easy to get together in the glass dish. Plus, you get to see all the layers in it, and, at a party, it looks like you have a never-ending supply of dip!

Ingredients

The perfect easy party dip! Let’s make some!

What You’ll Need

  • Refried Beans– the perfect base!
  • Unsweetened, plain Greek yogurt – a creamy, tangy addition with protein to boot. You can also use sour cream.
  • Guacamole– make your own or make it easy with store bought.
  • Salsa– the chunkier the better!
  • Cheddar and Pepper Jack cheese– we like the combo of both!
  • Sliced black olives – for texture and a ton of flavor!
  • Cilantro and Green onions – for garnish and flavor.
  • Lime juice– we use the juice of half a lime.

Instructions

All you need is a pretty pan and a simple set of ingredients to make this fun appetizer that people will ask for over and over.

In an 8.5×11 baking dish, build your layers. First we spread the refried beans.

Top that with a creamy layer of guacamole.

We sprinkle over the sliced black olives.

Add some chopped cilantro.

Squeeze the juice of half a lime over the whole thing!

You can enjoy this right away or cover and chill in the refrigerator for 30 minutes up to overnight. It just gets better the longer it sits!

Around our house, we love this fantastic, easy summer appetizer for all our summer gatherings. It’s got that great fresh taste of the season and protein to boot! It is so good and you can customize it even further by making it milder or hotter or adding in taco meat. The sky is the limit!

Substitutions & Variations

With this recipe, here are a few good customizations to help get you going.

Guacamole – We make it easy and use store-bought guacamole, but you can certainly make your own to give it even more of a personal touch!
Taco meat – Use some pre-cooked taco meat and make it a full meal, 8-layer, or whatever you want to call it!
Cheese – We love the Pepper Jack and Colby Jack cheese in this dip, but we know you have your own favorites, so go with cheddar or whatever you want to add in!

Storage Tips

Mind your guacamole!: Guacamole tends to turn brown over time. Since this recipe has it covered with other layers of yumminess, leftovers should be fine tightly covered for a couple days!
Fridge: Cover the prepared dish tightly with plastic wrap and pop it in the fridge, where it will keep for up to 5 days.

Ingredients

  • 15 ounces refried beans canned
  • 1.5 cups greek yogurt unsweetened plain
  • 2 cups guacamole
  • 1/2 cup salsa
  • 2 cups cheese shredded
  • 4 ounces black olives sliced
  • 1 cup fresh cilantro chopped
  • 2 green onions chopped
  • 1/2 lime juiced

Instructions

  • Spread refried beans in the bottom of an 8.5×11 casserole dish. Top with greek yogurt in an even layer. Spread guacamole in an even layer over the top of that.
    15 ounces refried beans, 1.5 cups greek yogurt, 2 cups guacamole
  • Top the cream layer with salsa. Spread the black olives over the top of that. Add about 2/3 of the chopped green onions and cilantro. Top with cheese. Garnish with remainder of onions and cilantro. Top all with juice of half a lime.
    1/2 cup salsa, 2 cups cheese, 4 ounces black olives, 1 cup fresh cilantro, 2 green onions, 1/2 lime
  • Cover and chill for about 30 minutes to overnight. Serve with sliced peppers or chips!

*Pro Tip* Add your favorite cooked protein to make it a meal. Cooked lean beef, turkey or chicken would all be great with this. Add the protein with the olive step over the cream mixtures.

🍴 PRO TIP!

The refried beans can be a little cumbersome when you first get them out of the can. I like to put them in a bowl and pop them in the microwave for just a few minutes. That makes the beans a little easier to handle and easier to stir up.

🗹 RECIPE FAQ’S

Can I make this dip ahead of time?

You sure can! If you need to make it a day ahead of time, just be sure to cover it tightly and store it in the fridge until you are ready to take it.

How can I loosen the texture of the refried beans?

You can certainly thin them out a bit with some broth or water, but be sure to mix them well and let them sit a bit before adding them in.

Will my cilantro keep for a while before I need to use it?

When you get it home from the store, put the whole bunch of cilantro in a cup of water in your fridge and cover it with the produce bag it came in. It will keep for up to a week this way!
