Redneck Caviar

Ingredients

  • 14 ounces black eyed peas can, drained and rinsed
  • 14 ounces black beans can, drained and rinsed
  • 14 ounces diced tomatoes can
  • 14 ounces sweet yellow corn can, drained
  • 1/2 cup red onion chopped
  • 1 bell pepper seeded and diced
  • 4 ounces green chilis can
  • 4 ounces sliced black olives can, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 16 ounces italian dressing bottle of prepared

Instructions

  • In a large bowl with a lid, mix all ingredients well.
    14 ounces black eyed peas, 14 ounces black beans, 14 ounces diced tomatoes, 14 ounces sweet yellow corn, 1/2 cup red onion, 1 bell pepper, 4 ounces green chilis, 4 ounces sliced black olives, 1 teaspoon garlic powder, 1 teaspoon dried parsley, 16 ounces italian dressing
  • Cover and refrigerate at least 2 hours. Best to allow to marinate overnight for flavors to meld.
  • Serve with tortilla chips and watch it disappear! Enjoy!
