A tasty way to have your Cauliflower

Did you know that you can eat really well and not break the calorie bank? It has been proven to get the best fuel for your body that we need a minimum of 3 servings of healthy vegetables each day.

Getting creative with that can sometimes be a challenge. It is no secret that I love to roast my veggies to keep things interesting. For example, our ROASTED SWEET POTATOES is a perfect one to show you how roasting really makes them new and delicious.

This Italian Cauliflower Salad is a game changer for any level of cook. Made with all raw veggies, it is a win in our home every time.

How to Make It

I have a real issue with recipes that are only prep and marinate. I always feel bad calling it a recipe at all. If you have 10 minutes to prep your vegetables, then you haven’t cooked anything and still get a delicious side on the table fast!

We use a store bought, low sugar dressing for this but I also suggest you give this STRAWBERRY VINAIGRETTE a try with this recipe. It is delicious!

Ingredients

  • 2 cups uncooked, riced cauliflower
  • 1 cup chopped tomatoes
  • 1 & 1/2 cups chopped arugula
  • 1 teaspoon salt 
  • 1/4 teaspoon pepper 
  • 1/2 cup reduced fat Italian dressing
  • Feta Cheese, optional

Method

  1. Prep tomatoes and arugula. 
  2. Add tomatoes, arugula and riced cauliflower to a large bowl.
  3.  Season with salt and pepper. Mix well. 
  4. Add dressing, mix well and top with crumbled feta cheese.
  5. Chill in refrigerator for at least an hour. Serve.

Tips and Tricks

Doesn’t the Cauliflower need to be cooked?

No. This is a fresh and crunchy salad. Cooked cauliflower can emit a lot of water and would need to be drained well. It could still make the salad soggy. Keep it raw and fresh!

Can I use frozen riced cauliflower?

You can but just like cooked cauliflower, it can be watery and really make a difference with the other ingredients. Most produce sections sell the bagged fresh cauliflower so I would suggest that.

Can I use riced Broccoli instead?

Yes! That is a great option too. Some people do not like the taste of cauliflower and riced broccoli is a great substitute.

Marinated Goodness

The trick to a really good and healthy salad is flavor! Allowing this salad to marinate is where the magic happens. The longer you can, the better!

    Very good! Easy to prepare. I felt like I was eating healthy. We had this salad with French Market Bean Soup and cornbread on New Years Day. Iโ€™d recommend it salad.
