Italian Cauliflower Salad

Italian Cauliflower salad is a great way to get beautiful veggies in. Quick, no cooking involved makes it as easy as it is delicious!

Ingredients

  • 2 cups Riced Cauliflower raw
  • 1 cup Tomatoes
  • 1.5 Arugula chopped
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup reduced fat Italian dressing
  • Feta Cheese optional

Instructions

  • Prep tomatoes and arugula. 
  • Add tomatoes, arugula and riced cauliflower to a large bowl.
  • Season with salt and pepper. Mix well. 
  • Add dressing, mix well and top with crumbled feta cheese.
  • Chill in refrigerator for at least an hour. Serve.
