Italian Cauliflower salad is a great way to get beautiful veggies in. Quick, no cooking involved makes it as easy as it is delicious!

- 2 cups Riced Cauliflower raw
- 1 cup Tomatoes
- 1.5 Arugula chopped
- 1 teaspoon salt
- ¼ teaspoon pepper
- ½ cup reduced fat Italian dressing
- Feta Cheese optional
Prep tomatoes and arugula.
Add tomatoes, arugula and riced cauliflower to a large bowl.
Season with salt and pepper. Mix well.
Add dressing, mix well and top with crumbled feta cheese.
Chill in refrigerator for at least an hour. Serve.
