Frozen cauliflower rice
Lean ground beef
Marinara sauce
Sour cream
Cottage cheese, we used small curd cottage cheese
Mozzarella cheese
Green onions
Parmesan cheese
Salt
Black pepper

Instructions 🥘
Cook the cauliflower rice according to the package directions and make sure to drain it well and add to a lightly greased casserole dish. This can be done in advance.
Brown the beef in a large skillet over medium-high heat and drain any grease remaining in the pan before adding in the tomato sauce, salt, and pepper to mix.
In a large mixing bowl, mix together the sour cream, cottage cheese, parmesan, and green onions.

Pour the sour cream mixture in the casserole dish with the cauliflower rice and mix until it’s an even layer.
Pour half of the beef mixture on top of the cauliflower rice mixture and sprinkle it with half of the cheese. Layer the remaining beef and cheese on top. Garnish with dried parsley.
Bake at 350 until the casserole is cooked through, and the cheese is melted on top. Rough cooking time is 20 minutes.
How To Store Leftovers
Allow the sour cream beef bake to cool fully before storing leftovers in an airtight container or wrapping the serving dish in plastic wrap. In the fridge, they’ll last up to 3 days.
To reheat the leftovers, bake the ground beef casserole in the oven at 350F until warmed through. You may need to add a splash of broth or water to regain the juicy texture as the bake does thicken up in the fridge.
You can reheat the beef bake in the oven in intervals the next day as well.

Cheese please. Feel free to experiment with a little more cheese for more layers of cheesiness or even different types of cheese like ricotta cheese in place of cottage cheese or even sharp cheddar cheese in place of mozzarella cheese.

- 1.5 cups cauliflower rice
- 1 pound lean ground beef
- 1.5 cup marinara sauce low sugar
- 1/2 cup sour cream
- 1 cup cottage cheese
- 2 cups mozzarella cheese
- 1/2 cup green onions diced
- 1/4 cup parmesan cheese grated
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 350. Cook cauliflower rice according to package directions and drain, be careful to remove all water. Pour into an oven-safe baking dish. Set aside.1.5 cups cauliflower rice
- Brown beef and drain if needed. Add beef back to the skillet and add marinara sauce, salt and pepper. Mix well. Set aside.1 pound lean ground beef, 1.5 cup marinara sauce, 1/2 tsp salt, 1/2 tsp pepper
