Viral Quick and Easy Crock Pot Lasagna Soup

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup onion diced
  • 1/4 cup tomato paste
  • 1 pound ground beef
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 28 ounces tomato puree
  • 15 ounces crushed tomatoes
  • 2.5 cups chicken broth
  • 1 teaspoon oregano
  • 2 tablespoons basil plus 1 teaspoon
  • 1/2 teaspoon rosemary
  • 12 lasagna noodles dried
  • 3 cups mozzarella cheese
  • 8 ounces ricotta cheese

Instructions

  • Heat olive oil in a large skillet. Cook diced onions until softened. Add in ground beef, salt, pepper and minced garlic. Brown and drain. Add to the liner of a crock pot.

  • Add in tomato puree, tomato paste, crushed tomatoes and chicken broth. Stir well.

  • Season with dried oregano, rosemary and 1 teaspoon of basil. Cover and cook on high for 3 hours or low for 6 hours.

  • About 15 to 20 minutes before cook time is done, break up lasagna noodles and mix in to ground beef and tomatoes. Stir in 2 cups of mozzarella cheese. Cover and cook for another 15 to 20 minutes.

  • Before serving, mix ricotta cheese with 1 cup of mozzarella and 2 Tablespoons of dried basil. Set aside and garnish soup with this mixture when serving.
