Substitutions & Variations

With this recipe, I can think of a few customizations to help get you going.

Sugar – A sugar substitute will be ok for this recipe, if you’re looking to make them a little more healthy.
Flour – We use all-purpose flour for these cookies, but a white whole wheat flour or superfine almond flour will work as well.
Spices – We love this recipe’s spice balance, but feel free to vary the amounts to your taste. Extra ginger or crystalized ginger can give them more flavor and a little more snap!

Notes

*Pro Tip – to prevent a flat cookie, make sure your butter is not TOO soft. You only want to be able to make an indention when pressing with your finger. If your butter appears to be melting, it is too soft and will cause your cookies to spread.

🍴 PRO TIP!

If you want to make things a little easier during mixing, you can cube your soft butter. This will help things come together easier and you can get straight to making those cookies! Remember, though, if your butter mixes in too fast, then that butter is too soft!

🗹 RECIPE FAQ’S

What flour is best for even softer cookies?

You might think about adding in some cake flour to your all-purpose flour to soften them further.

How do I keep these cookies soft in the fridge?

You can add a piece of bread into the airtight container with the cookies. The bread will help with moisture and keep the cookies from getting stale.
