Fresh Oven Roasted Tomatoes with Basil and Parmesan

Our fresh oven roasted tomatoes with basil and parmesan are a pop of freshness. We take summer tomatoes and bake them with tons of flavor and a crispy, cheesy bite.

It is officially tomato season here and I have ripe tomatoes coming out everyday. I love my Roma tomato plants and they yield so many I can make tons of MARINARA SAUCE with them.

They are also the perfect tomato to use for this recipe as they cook up well and hold their shape during the roasting process. This is the perfect summer appetizer but with tomatoes being in great supply all year at your market, this small bite with big flavor is great any time of year.

Ingredients

We use simple but powerful ingredients here to pack a ton of flavor in each juicy bite.

  • Roma tomatoes – in season all year, this is the perfect tomato for cooking. It’s not just for marinara.
  • Salt – salt adds so much flavor all on its own. It accentuates the natural flavors of the food it compliments.
  • Minced fresh garlic – fresh is the way to go here. It gives a milder garlic flavor and won’t overpower the other seasonings.
  • Fresh green onion – the mildest of the onion, using it promotes freshness and texture with just a hint of onion flavor.
  • Fresh Rosemary – another milder component to its dried version, using fresh gives just enough of the rosemary flavor.
  • Pepper – just like its partner salt, this simple seasoning is powerful and all you need to add to the flavors of the tomato.
  • Fresh Basil leaves – for garnish as well as just a touch of earthiness.
  • Parmesan Cheese– roasting it in this way will provide for a crunchy texture while adding the unmistakeable flavor parm is known for.

Instructions

A fresh bite that can be whipped up in a flash. This also has a short cooking time so you get to eat faster!

Preheat oven to 425 degrees. In a bowl, combine salt, garlic, green onion, rosemary and pepper.

Bake 15 to 20 minutes until golden brown.

Allow to stand for 1 to 2 minutes and serve warm.

Substitutions

These baked parmesan tomatoes are good as is but here are a few ideas to make it new and different next time you make it!

  • Herbs – in place of basil, you can use simple Italian seasoning here or any other herb you have on hand. Chives would be wonderful.
  • Cheese – any shredded or crumbled cheese will work on top. Get creative.
  • Onion – leave out altogether or substitute with something milder. Peppers of any kind finely minced will work very well here too.

Store the tomatoes in an airtight container for up to a week in the refrigerator. They will not freeze well.

Ingredients

  • 4 Roma tomatoes
  • 1/2 tsp Salt
  • 1 tsp Fresh garlic minced
  • 1 tsp Green onion minced
  • 1/2 tsp Rosemary chopped
  • 1/4 tsp Pepper
  • 14 Basil leaves small
  • 1/2 cup Parmesan cheese grated

Instructions

  • Preheat oven to 425. Line a sheet pan with parchment paper. Slice tomatoes 1/4 to 1/2 inch thick and arrange in a single layer on baking sheet.

  • In a mixing bowl, combine salt, garlic, green onion, rosemary and pepper.
    1/2 tsp Salt, 1 tsp Fresh garlic, 1 tsp Green onion, 1/2 tsp Rosemary, 1/4 tsp Pepper
  • Sprinkle a small amount of mixture and then parmesan cheese on top of each tomato slice, distributing evenly.
    1/2 cup Parmesan cheese
  • Add a small basil leaf to the top of each slice. Bake 15 to 20 minutes until golden brown.

🍴 PRO TIP!

Some tomatoes can weep a bit. These are not typically mushy but if you wanted to be sure, after slicing tomatoes, place on a plate and sprinkle a bit of salt over them and let them sit for about 30 minutes. Remove them and pat them dry and use as normal. Doing this will help remove any excess water if you find yourself with a juicier than normal tomato.

What is the best tomato to bake with?

Roma tomatoes. They not only have a ton of flavor, they hold up to cooking well. That is why they are used in many types of cooked dishes. Feel free to try other tomatoes for this recipe. Heirloom tomatoes or any other summer tomato variety will work well.

Can I use another cheese?

Yes. Parmesan is dry and will help get a crispy texture however, finely shredded mozzarella would work as well. For a creamier cheese, gouda, bleu or even some varieties of goat cheese would also be wonderful.

Are these roasted tomatoes healthy?

Yes! Tomatoes are full of vitamins and minerals and using these fresh whole ingredients help you maintain a healthy diet. Coming in at just under 2 carbs per tomato, this is a healthy snack that you can feel good about.
