Truth! Just ask any kid who doesn't love eating vegetables. I bet most of them love bacon though! wrapping veggies in bacon is as classic a savvy mom move as pouring cheese sauce on broccoli. Just like our ROASTED BROCCOLI WITH TANGY CHEESE SAUCE, this recipe will win skeptics over every single time.
What makes this a great adult side dish is the addition of balsamic vinegar. It cooks up sweet when all of the vinegar evaporates and you are left with a sweet syrup that really compliments the smoky bacon. Not to mention, the salty Parmesan Cheese that becomes a crisp burst of texture on the asparagus.

How to Make Bacon Wrapped Asparagus
~Ingredients~
- 1 medium bundle of fresh asparagus, trimmed
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ cup grated parmesan cheese
- ¼ teaspoon pepper
- 2 tablespoons balsamic vinegar
~Method~
Preheat oven to 400 degrees Fahrenheit. Cut bacon slices in half. Trim woody ends from asparagus and place in a single layer on a baking sheet. Drizzle with olive oil. Take one halved slice of bacon and wrap a bundle of 3 asparagus with the bacon in the center.
Lay seam side down on a baking sheet.
Once all bundles are assembled, sprinkle with salt, pepper and Parmesan Cheese. Drizzle balsamic vinegar over each bundles.
Bake at 400 degrees for 15 minutes. Remove from oven and turn each bundle over. Return to oven and bake another 15-20 minutes until bacon is crisp and asparagus is dark green and wilted. Allow to cool slightly before serving.
Tips and Tricks
- Where do I trim asparagus? - Most asparagus bought fresh comes with these really great rubber bands. Not only are a great item to keep and reuse in the kitchen for things like cooking whole chickens and binding the legs, they also usually mark the spot right where you need to cut those woody ends. I also like to leave the bands on when I am blanching asparagus to freeze too. Find out how to do that HERE!
- Do I put a toothpick in them? - You can. I do not. Normally the bacon will cook and adhere pretty well to itself making the need for a toothpick unnecessary. Also, by not using them, you can avoid a potential eating hazard if you forget to remove them. I may or may not have done that in the past.
- How do I tell when the asparagus is done? - After a 20-35 minutes cook time they are pretty well done. What you want to look for is if the bacon is done. Asparagus is one of those foods that if well seasoned, you can eat if still a tad al dente. Also it is more about preference, I like mine to still have a little snap to them. As long as you don't burn your bacon, get them as done as you like!
