Simple Coconut Bliss Balls are one of the most perfect little treats. Using the natural sweetness of honey and coconut, these bites of bliss will have you coming back for more!
Coconut is one of our most favorite ingredients to use for texture and sweetness. You can find some of our favorite ways to use it in our recipes for LEMON COCONUT COOKIES or our ORANGE CHEESECAKE BARS. There are few other ingredients that add both texture and sweetness naturally so coconut is a healthier way to get that without adding refined sugars.
Ingredients
No baking desserts are really the perfect thing! All you need is your microwave for this one and just a few wholesome ingredients.
- Finely shredded coconut
- liquid honey
- coconut oil, melted
- pure vanilla extract
- good-quality dark chocolate chips

Instructions
You will spend more time prepping your sheet pan than anything else here. See the video in the recipe card with some helpful tips using parchment paper!
In a large bowl, mix the coconut, honey, coconut oil, and vanilla mix with a hand mixer until the mixture sticks together. Form the mixture into 1-inch balls, pressing them firmly with your hands. Place them on a sheet pan in the refrigerator to harden
for at least 30 minutes.
In a microwave safe bowl, melt the chocolate in 15 second intervals in the microwave, stirring in between, just until chocolate is melted and smooth.
Remove the coconut balls from the the refrigerator and drop the ball into the chocolate and use a fork to remove and shake off excess
Place the ball back on the tray. Continue until all the balls are covered in chocolate then sprinkle some coconut over top. Allow chocolate to set.
Storage
Cool at room temperature and store in an airtight container in the refrigerator for up to one week.
Tips and Tricks
Either works great. We used sweetened to get that sweet taste we love but if you are watching your sugar or carb intake the unsweetened option works well.
I really like mixing the dough in a food processor for this reason. A hand mixer or whisk will work but for the smoothest dough, the food processor is the way to go.
Yes! Get Creative here. I also like chopped maraschino cherries in this. You can use almond or mint flavoring instead of vanilla or milk chocolate instead of dark to change the flavor. The sky is the limit!
