These are really simple and can also be a good starting point for other delicious flavors too. If you are not a nut lover, the vanilla flavor goes well with chocolate chips to make a whole new dessert.

How to Make Easy Pecan Pie Muffins
This is one bowl wonder. Simply combine your wet ingredients and dry together, stir in the pecans and you are ready to spoon in your pan and bake. In a large bowl, combine your eggs, brown sugar, melted butter and flour and mix well.
Fold in your chopped pecans and mix well.
Spray your mini muffin tin well and spoon in mixture to cups. Only fill 2/3 of the way so they don’t rise too much. Bake at 350 for 20-25 minutes or until slightly browned.

How do I keep them from sticking to the muffin cups?
I use bakers joy. It is a cookie spray especially for baking and contains a little flour. It is instrumental keeping baked goods from sticking. I probably over grease the pan a bit too to insure they don’t stick as some mini muffin tins can be cumbersome.
What can I substitute for nuts?
If you are not a nut fan, the base for this recipe is a perfect vanilla muffin that pairs well with mini chocolate chips. If you can’t get pecans, you can also use hazelnuts or cashews for a similar experience.
Do I cool them in the pan?
No. I immediately turn the pan out on to a cooling rack after baking. I have found that with mini muffins, they tend to stick worse as they cool. Turning them out immediately keeps this from happening no matter how much non stick spray you use.
How long will they last?
If kept in an airtight container, these mini muffins will last up to a week. That is, if they don’t get eaten first. You can make them ahead of time and keep the container in the refrigerator to prolong the life a few more days.
Can I freeze the Pecan Pie Muffins?
Yes. These can be frozen. Allow them to cool completely, wrap them loosely in plastic wrap and place in a freezer safe container or bag. They can be frozen for up to 3 months.

- 1 cup Brown Sugar firmly packed
- 2/3 cup Butter melted
- 1/2 cup All purpose Flour
- 1.5 cup Pecans chopped
