Crock Pot Slow Cooked Pinot Noir Mushrooms

Our CROCK POT SLOW COOKED PINOT NOIR MUSHROOMS have a flair of delicious steak house mushrooms from days gone by. Slow cooked in the crock pot with wine, butter and tasty seasonings, these mushrooms can be served as a side or an appetizer.

No matter how you serve them, the mushroom lovers will all agree, you must make them and make them often.

If you look up any appetizer on our site, you will find they all are very special. We love to have them at Christmas as a way to just graze and enjoy each others company. I love appetizers that can also be something else. These mushrooms can stand alone no doubt but they are also great served with grilled steak and pork as an accompaniment to them.

No matter what you do with them, they will be a hit! Everyone we have ever served them too just can’t get enough. And don’t worry, they don’t taste boozy! Fancy little appetizers like these mushrooms are a lot like our BLACKBERRY AND PECAN BRIE, they add a flair to any meal or occasion that makes folks feel important.

Ingredients

We love the seasoning combo on this recipe but I can think of a thousand other herbs that would do the trick and make them something different. Check out our variations section to see some ideas. We use staple ingredients in this one so nothing fancy to run out and buy. Except for wine, if you are like me and don’t keep it at home.

What You’ll Need

  • Pinot Noir Wine – don’t worry, the alcohol cooks off!
  • Button Mushrooms – we like baby bella for the most flavor.
  • Butter, Water and Worcestershire Sauce – to make the sauce something special.
  • Chicken and Beef Bouillon Cubes – tons of flavor packed in little cubes.
  • Garlic, Dill, Pepper and Bay leaves- flavors that accentuate the earthiness of the mushrooms

Instructions

Using the trusty crock pot makes this a cinch! You can cook up these tasty mushrooms with a delicious sauce while you do other things! That is a win!

In the liner of your crock pot, add 3 chicken and 3 beef bouillon cubes.

Drop in two whole sticks of butter.

Mix in two cups of hot water. We just get it hot at the tap. Just hot enough to help the butter and bouillon start to melt.

Pour in the WHOLE bottle of wine. Yep, the whole thing!

Add in 2 Tablespoons of worcestershire sauce.

Add in 5 teaspoons of minced, fresh garlic.

Now for the dried herbs. Add in 2 teaspoons of dill, 1.5 teaspoons of black pepper and two bay leaves.

Carefully drop in all of the 3 pounds of mushrooms. Mix slightly to make sure they are coated with the seasoning and sauce.

Cover and slow cook on low for 6 to 8 hours. Garnish with dried parsley, serve and enjoy!

Fancy little appetizers always make me feel like I am serving an extra portion of love to the people I am feeding. That I took the time to show them more love with a special dish. This dish is one of those that makes people feel valued and loved. It is funny but its true!

Variations and Substitutions

We like the earthy seasonings to the mushrooms just as is but here are some ideas to make this recipe your own.

  • ADDITIONS – adding sliced onions or peppers to this really takes it to another level. Choose what you like and add it in!
  • SEASONINGS– adding different herbs like oregano and basil give it an italian flair. Even spicy seasonings like cayenne, smoked paprika or red pepper can make it have a little pep. Get creative!
  • WINE – any red variation will do nicely here. We opt for a sweeter wine but if you like a drier one, those will work well too. Try it with a Burgundy, Merlot or even Cabernet Sauvingon.

How to Make ahead and Store It

This is great to make ahead a day or two in advance. It should keep nicely in an airtight container for up to 3 to 4 days in the refrigerator. To reheat, add back to the crock pot and simmer on low or warm setting until ready to serve.

In our experience, mushrooms do not freeze well. However, the sauce is great to freeze and reuse to add to gravies and other savory sauces. It has a ton of flavor so don’t throw it out!

Our crock pot pinot noir mushrooms are slow cooked to perfection in butter, pinot noir red wine and lots of great seasonings. The perfect appetizer or even side dish for any occasion.

Ingredients

  • 3 pounds whole mushrooms baby bella
  • 1 bottle pinot noir wine
  • 1 cup butter
  • 2 tablespoons Worcestershire sauce
  • 3 chicken bouillon cubes
  • 3 beef bouillon cubes
  • 5 teaspoons garlic minced
  • 2 teaspoons dill dried
  • 1.5 teaspoons black pepper
  • 2 bay leaves
  • 2 cups hot water
  • 1 tablespoon Parsley dried

Instructions

  • In the liner of a crock pot add in both the chicken and beef bouillon cubes, two sticks of butter and the hot water. Then, slowly add in the whole bottle of pinot noir and Worcestershire sauce.
    1 bottle pinot noir wine, 1 cup butter, 2 tablespoons Worcestershire sauce, 3 chicken bouillon cubes, 3 beef bouillon cubes, 2 cups hot water
  • Season the wine mixture with minced garlic, dill, pepper and bay leaves.
    5 teaspoons garlic, 2 teaspoons dill, 2 bay leaves, 1.5 teaspoons black pepper
  • Add in the mushrooms and stir carefully to coat. Cover and cook on low for 6 to 8 hours when liquid is reduced and mushroom are soft and done. Serve as a side or appetizer garnished with dried parsley.
    3 pounds whole mushrooms, 1 tablespoon Parsley

*Pro Tip – if you need them in a pinch, cook on high for 2 to 3 hours.
*Pro Tip 2 – save the sauce when the mushrooms are gone, freeze it in small portions for a tasty addition to other sauces and gravies!

The mushrooms are great but only because of that wine sauce. When the mushrooms are gone, save the sauce and freeze it in small portions to have to add to other dishes, sauces or gravies. You will be glad you did!

🗹 RECIPE FAQ’S

Will the alcohol cook off?

It does. Once the cooking process is done, you will be left with the sugars and rich flavors of the wine. No alcohol!

What type of mushrooms should I use?

We like a smaller mushroom like a button type. White or baby bellas work great here. If you use a larger mushroom I would suggest removing the stem and slicing them.

Can I use broth instead of bouillon?

Yes. Omit the water and add one cup of beef and one cup of chicken if you do this. It also won’t hurt to heat it a bit to help melt the butter.
