Our Chicken Love Story

 A long, long time ago, I was a 21 year old girl in love with a 20 year old guy who loved to grill. We found a recipe in the Old Farmers Almanac and fell in love with it. It was for grilled chicken. It wasn’t this recipe but one very much like it. A whole lot sweeter than this one, we decided to make it our own. That is what cooking is all about right?

Over the years, we tweaked it and got it just like we wanted it and have always affectionately referred to it as, Sunshine Chicken. Because when you eat it, it makes you feel all sunny and happy inside. It has been a family favorite and one we have served to our friends for many years. Much like our recipe for STEAK AND POTATO SOUP, it is a Buttered Home Heirloom recipe.

While it is fantastic on the grill, this method is also wonderful to me because browning it in my Grill pan gets the bacon all crispy and done. Finishing it in the oven also takes the guess work out of the scary question of is the chicken done all the way through.

~ Ingredients ~

  • Salt and pepper to taste
  • 1/2 cup Pineapple juice
  • 1/2 cup Orange Juice
  • 1/4 cup prepared mustard
  • 1/2 cup packed brown sugar
  • 2 pounds boneless, skinless chicken tenderloins
  • 12 oz package of bacon, one slice per tenderloin
  • 1/2 to 1 teaspoon Southern Flavor Charbroil seasoning

~ Method ~

  1. Mix first 5 ingredients in a small bowl. Reserve about 1/4 cup for basting in a separate bowl.
  2. Wrap chicken tenderloins with a slice of bacon and secure with toothpicks. Sprinkle on the Southern Flavor Seasoning.Place in a large baking dish and pour marinade on top. Cover with plastic wrap and marinate in the refrigerator 2-6 hours.
  3. After marinating, grill on a grill until chicken reaches 165 degrees F OR brown in a grill pan sprayed with cooking spray, 2-3 minutes per side, basing with reserved marinade while cooking. Transfer to a baking sheet.
  4. Bake in a 350 degree F oven for 25-3o minutes. Again cooking until internal temperature reaches 165 degrees F. Allow to rest for 5-10 minutes, remove toothpicks and enjoy!

Tips and Tricks

What if I can’t get Southern Flavor in my area?

No worries! We have a great link RIGHT HERE where you can order yours even if its not sold in your area. If you may be cooking these on the grill the SF seasoning may not be necessary for the smoky flavor it would provide. You can supplement with onion and garlic powder if you just can’t wait on your order.

What do I cook them in if I don’t have a grill pan or a grill?

You can surely brown them in a skillet just until the bacon starts to crisp up then transfer them to a pan and bake in the oven as directed. The grill pan is for a great color and sear to the meat which seals in the moisture and helps the bacon crisp up.
