If it were up to Big D, we would eat beef every single night. His favorite cut of beef? Ribeye steak of course! Let’s be honest, our pocketbook nor our waistline could handle that much red meat! Me on the other hand, I am a fan of whatever cut of steak is on sale.

This Bourbon Steak recipe is so versatile, you can just about use any cut of meat you like. From Filet to Chuck round steak, it is a family pleaser.

And Roasted vegetables, you know how I love them! Just like this Roasted Broccoli. Roasting veggies makes them take on a whole new flavor. One you will surely love as much as I do!

How to make Bourbon Steak with Brussel Sprouts and Sweet Potatoes

Sheet pan meals are easy and quick. This one is great because you can make it as fancy as you want with whatever cut of meat you choose. Pictured, you will see we used a Chuck Bottom round steak. The technique we use to marinate is the same for whatever cut of meat.

For sheet pan cooking, we like our cuts of meat to be around 3/4 of an inch in thickness. Simply poke it with a fork and massage that marinade in. It reduces time needed to penetrate the steak and that is a good thing. So let’s tell you how!

~ Ingredients ~

  • 1 pound of steak, your choice
  • 1 pound of Brussel sprouts, trimmed and halved
  • 2 large sweet potatoes, peeled and cut into bite size cubes
  • 1/2 cup chopped red onion
  • 1 and 1/2 teaspoons pepper
  • 1 tablespoon fresh rosemary, minced
  • 2 tablespoons brown sugar
  • 1 and 1/2 teaspoons salt
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 tablespoons bourbon
  • 1 tablespoon horseradish
  • 2 tablespoons whole grain mustard
  • 1 teaspoon smoked paprika

~ Method ~

  1. Preheat oven to 425 degrees F. In a large bowl, mix sweet potatoes, Brussels, onion, salt, pepper, rosemary, paprika and olive oil. Spread on a sheet pan in a single layer and bake for 20 minutes.
  2. While vegetables are baking. Pierce steak with a fork on both sides. In a medium bowl, mix bourbon, brown sugar, garlic, mustard and horseradish to combine. Pour over steak and massage in and set aside.
  3. When vegetables are done, spread to each end of sheet pan and place steak in the middle. Bake another 20 minutes, turning the steak halfway through cooking time.
  4. Allow meat to rest for 5-10 minutes, slice and serve. Enjoy!

The answer to this is simple. Usually steak is tough because it was cooked too long. If you are someone who prefers more done steak, I suggest a longer marinating time so the meat doesn’t dry out. If you stick to the high heat, 20 minute cooking time, it should only be pink.

Can I do this with Chicken?

Yes, I would however, check it with a meat thermometer every 10 minutes and not exceed 165 internal temperature. Chicken will generally cook a bit faster than beef. Depending on your oven, 20 minutes may be perfect but it could also be too much.

Is it necessary to cook the vegetables first?

It is. We are using root vegetables which take a bit more cooking to get tender. If you use veggies that are not root in nature, you can cook for only 20 minutes with the meat. Use your best judgment when picking your veggies and if what you use normally takes 20 minutes to cook, then stick to that. Potatoes take about 30-40 minutes so that is why this particular version is written that way.
