Ingredients
1lbSteakyour choice
1lbBrussel sproutstrimmed and halved
2Large sweet potatoespeeled and cut into bite size cubes
½cupRed onionchopped
1.5teaspoonPepper
1tablespoonFresh rosemaryminced
2tablespoonBrown sugar
1.5tsoSalt
2tablespoonOlive oil
1tablespoonGarlicminced
2tablespoonBourbon
1tablespoonPrepared horseradish
2tablespoonWhole grain mustard
1teaspoonSmoked paprika
Instructions
Preheat oven to 425 degrees F. In a large bowl, mix sweet potatoes, Brussels, onion, salt, pepper, rosemary, paprika and olive oil. Spread on a sheet pan in a single layer and bake for 20 minutes.
While vegetables are baking. Pierce steak with a fork on both sides. In a medium bowl, mix bourbon, brown sugar, garlic, mustard and horseradish to combine. Pour over steak and massage in and set aside.
When vegetables are done, spread to each end of sheet pan and place steak in the middle. Bake another 20 minutes, turning the steak halfway through cooking time.
Allow meat to rest for 5-10 minutes, slice and serve. Enjoy!
