Bourbon Steak with Brussels and Sweet Potatoes

Bourbon Steak with Brussels and Sweet potatoes is a one sheet pan meal that your whole family will love. A sultry quick marinated steak paired with sweet potatoes and Brussels seasoned to perfection with garlic and bourbon.

Ingredients

  • 1 lb Steak your choice
  • 1 lb Brussel sprouts trimmed and halved
  • 2 Large sweet potatoes peeled and cut into bite size cubes
  • ½ cup Red onion chopped
  • 1.5 teaspoon Pepper
  • 1 tablespoon Fresh rosemary minced
  • 2 tablespoon Brown sugar
  • 1.5 tso Salt
  • 2 tablespoon Olive oil
  • 1 tablespoon Garlic minced
  • 2 tablespoon Bourbon
  • 1 tablespoon Prepared horseradish
  • 2 tablespoon Whole grain mustard
  • 1 teaspoon Smoked paprika

Instructions

  • Preheat oven to 425 degrees F. In a large bowl, mix sweet potatoes, Brussels, onion, salt, pepper, rosemary, paprika and olive oil. Spread on a sheet pan in a single layer and bake for 20 minutes.
  • While vegetables are baking. Pierce steak with a fork on both sides. In a medium bowl, mix bourbon, brown sugar, garlic, mustard and horseradish to combine. Pour over steak and massage in and set aside.
  • When vegetables are done, spread to each end of sheet pan and place steak in the middle. Bake another 20 minutes, turning the steak halfway through cooking time.
  • Allow meat to rest for 5-10 minutes, slice and serve. Enjoy!
