Why You’ll Love This Easy Summer Salsa

Our Fresh Peach Salsa is a colorful mix of the best flavors of summer. The peaches add a juicy sweetness that goes well with the slight heat of the pickled jalapenos. The fresh cilantro and fresh lime juice bring it all together with a bright flavor that will have folks wanting the recipe. It is quick and easy to make and a great way to use an abundance of peaches this time of year.

Ingredients

Fresh at it’s finest, we throw in some pickled jalapeños to give it that little something extra!

A wooden surface with a jar of pickled jalapeños, three peaches, a red bell pepper, half an onion, a bowl of liquid, a bunch of cilantro, and a wooden container of salt.

What You’ll Need

  • Ripe Peaches: Their natural sweetness is the heart of the recipe.
  • Red Bell Pepper: Sweet and mild, the pepper adds sweetness that pairs well with the peaches and a texture and crunch.
  • Diced Onion: Perfect for more balance to the sweet and added crunchy texture.
  • Cilantro: Fresh cilantro adds a herby, citrusy flavor that ties all the flavors together.
  • Lime Juice: It acts as a preservative and enhances the flavors of every ingredient.
  • Garlic Clove: A little does a lot here and it adds to the earthy flavor balance with the sweet peaches.
  • Pickled Jalapeño Pepper: They add a bit of briny perfection with the added heat to make this salsa spicy.

Taking the bounty of Summer and making it into a delicious and fresh recipe is the heart of cooking. For years, people didn’t have the luxury of year round produce. When I make recipes like these, I am reminded of the cooks before me who took what was in abundance and made lots of great things for the people they loved. That is the heart of cooking!

Equipment

🔧 I love to share recipes that are no special equipment required but here are a few things that would definitely make this recipe easier!

How to Store

  • Refrigerate: Store your Fresh Peach Salsa in an airtight container in the fridge for up to 1 week.
  • Freezing: Freezing is not recommended, as the peaches and veggies can become mushy when thawed.
  • Make Ahead: You can prep the salsa a day in advance. The longer it sits, the better it gets!

Notes

*Pro Tip*
If you don’t love cilantro, substitute it with chives, basil or even mint.

🍴 PRO TIP!

Lots of people will want this out of season and will probably try to use canned peaches. I would not suggest this as they are already so soft. Instead, use fresh mangoes or even nectarines if you can find them out of season.

🗹 RECIPE FAQ’S

How can I make this less spicy?

Omit the pickled jalapeño if you don’t do spicy. Or even reduce them just just a small amount and increase the peaches to bring more balance.

Can I use canned peaches?

They are just so soft. In a pinch you can just be sure to get the ones packed in juice as they may be firmer. I would also increase the amount as they will soften quick.

Can I serve this right away?

Yes, while better chilled for a bit, it can be served as soon as it is mixed. It does get better with time so if you can make at least 30 minutes ahead, the better!
