Toast Yay S’Mores Candy takes this delicious Girl Scout Cookie and turns it into a chocolate lovers dream. The French toast inspired cookie was the perfect match with the soft marshmallows and rich chocolate.

Making Candy out of Cookies!
Y’all already know I love to re-invent leftovers. We love taking things and making them new, just like these GRIT CAKES WITH SHRIMP. Recently, I had the wonderful opportunity to work with the Girls Scouts of Southern Alabama to highlight their new cookie, Toast Yay!
This French toast inspired cookie is delicious all on its own but immediately, I knew it would be a good fit to add to all kinds of recipes. The Cinnamon seemed like a perfect pairing for one of the Girl Scouts favorite things to do, make S’Mores!!! We took this glorious confection and made it into the perfect bite of S’more candy!
How to Make Toast Yay S”mores Candy
Let’s talk ingredients. So this one is easy, all you need is semi sweet chocolate chips and white chocolate of some kind. I had bark on hand. The rest are pantry staples! Easy Peasy!
~Ingredients
- 1 cup white chocolate – I used bark but you can totally use chips if you prefer. About a cup will drizzle just fine over all of this beautiful candy.
- 1 teaspoon vanilla – this is to add depth to the white chocolate. This way it won’t overpower what is going on in the candy itself.
- A splash of milk – when added to the heated white chocolate it kind of smooths things out.
- 8-9 Toast Yay Girl Scout Cookies, crumbled – that perfect texture and cinnamon taste for the s’mores!
- 1 & 1/2 cups semi sweet chocolate chips – what more can I say? Its chocolate!
- 1 cup sweetened condensed milk – mixed with the chocolate it adds sweetness and smooths out the chocolate to melt.
- 2 cups miniature marshmallows – again, just a tad sweet but more for texture sake.
How to Make Them
- Break Toast Yay cookies into bite sized pieces and mix in a large bowl with mini marshmallows. Set aside. Prepare a 9×13 baking dish with parchment paper, butter or lightly spray parchment.
- In a large microwavable bowl, combine chocolate chips and sweetened condensed milk. Stir well. Microwave for 1 minute and stir. If not smooth and mixed well, microwave on regular power in 30 second increments (not exceeding 2 minutes total so 2 rounds of 30 seconds) stirring just until smooth and creamy.
- Pour over cookies and marshmallows and stir well to combine. Gently spread mixture in prepared 9×13 pan.. Refrigerate for 1 hour until set. Remove from fridge and prepare to drizzle.
- In a microwavable container, mix white chocolate with a splash of milk and microwave for 1 minute. Proceed the same way as with the chocolate chips, heating in 30 second increments not to exceed 2 total minutes stirring each time to mix until smooth. add vanilla and mix well.
- Cut candy pieces into squares and use a fork to drizzle with white chocolate. Allow to set at room temperature and enjoy!
Tips and Tricks
More than likely it has been cooked too long. The longer it cooks, the faster the moisture is pulled out. Make sure you only do small increments of time to avoid this. As long as its not burnt, it’s not wasted. you can still eat it as fudge!
Sure! All of our recipes are easily adaptable. Just know that if you add more than one more item to the candy mixture, you may need more chocolate so adjust accordingly.
Yes! However, Girl Scout cookies are the bees knees in our eyes and meant to be special since they are sold exclusively. Using them for recipes like this one only makes them that much more special!
