Crock Pot Chicken Tortilla Soup
I know you all get tired of hearing me talk about soup. LOL, well, I never get tired of eating it! When you combine a beautiful soup with the ease of making it, then you have me hooked! Most all of the soups we specialize in here at The Buttered Home are Roux Based but we love to keep things simple too.
Making soup in the Crock pot makes my life so much easier. Having a hearty meal waiting for my folks when we get home saves us time and allows us to sit down together sooner. This Chicken Tortilla soup is a light and filling soup that is good in the Winter and Summer.
How to make Crock Pot Chicken Tortilla Soup
There is virtually no prep work to this soup at all. Using raw chicken breast, canned produce and some fresh, you will spend about 5 minutes chopping and prepping for this one. We love to serve this soup with these Homemade Tortilla Strips too. They add another texture to the soup that makes is even more yummy. Both are so easy! So let’s get to it!
~ Ingredients ~
- 1/2 cup diced onions
- 1 cup canned corn
- 1/2 cup chopped red bell pepper
- 1 can black beans, rinsed and drained
- 4 oz green chilies
- 1 pound Chicken Breast
- 8 oz tomato sauce
- 14.5 oz diced tomatoes
- 2 teaspoons chili powder
- 1 tablespoon minced garlic
- 4 cups chicken broth
- salt and pepper to taste
~ Method ~
- Place chicken in a 6 qt or larger crock pot. Add all other ingredients and stir.
- Cook on low 6 hours or high for 4. Remove chicken and shred with two forks.
- Place chicken back into the crock pot and stir. Allow to cook on low for 30 minutes or high for 15.
- Serve with guacamole, sour cream, or green onions. Don’t forget the Tortilla Strips! Enjoy!
Crock Pot Chicken Tortilla Soup, Easy and Delicious
Life gets busy. Never let it get too busy that you don’t take the time to have a great home cooked meal with your family. We try to do this at least 3 times a week. Doing this has made such a difference in the harmony of our home. If we can get back to communicating with one another directly, relationships improve. Of course it never hurts to do it over a beautiful meal.

Notes
This is an easy recipe to prep in a freezer bag and freeze for later. I add all of the ingredients except for the broth and freeze. When I am ready to make it, I add the contents of the bag to the crock pot and add the chicken broth. Cook as directed.
