There isn’t much better than a dressed up BAKED POTATO and this casserole gives you that same sense but all of the dressing up has been done for you!

How to make this Potato Casserole

Simple ingredients that are pantry staples really show out in this dish. I love making beautiful, scrumptious food by foraging in my fridge.

What you may think is a hodgepodge of ingredients can become a real thing of beauty. So let’s get to it!

~ Ingredients ~

  • 6 medium Yukon gold potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 2/3 cup mayonnaise
  • 6 slices of bacon, cooked and crumbled
  • 1 tablespoon minced garlic
  • 1/2 cup chopped green onion
  • 1 teaspoon salt
  • 1 teaspoon pepper

~ Method ~

  1. Preheat oven to 350 degrees Fahrenheit. Mix all ingredients in a large bowl.
  2. Lightly grease a 9 x 13 casserole dish. Pour in casserole.
  3. Bake for 1 hour or until cheese has melted and brown. Enjoy!

Tips and Tricks

Do my potatoes need to be cooked beforehand?

No. This casserole cooks in about an hour which is plenty of time to get the potatoes cooked through. Make sure you cut all of the pieces about the same size to promote even cooking.

How can I make this healthier?

There are a number of ways to make this a bit healthier. You can use jicama in place of the potatoes or sweet potatoes. You can also sub unsweetened, plain greek yogurt for the mayonnaise. These things will help lighten it up.

Can I use leftover baked potatoes?

Yes! Cube them up and mix as written. Cut your cook time down to 30 minutes and all is well!
