This Cheesy Bacon Potato Casserole serves as a great side dish but also one that might just steal the show. Beautiful gold potatoes drenched in a sultry sauce of mayo and garlic are only made better by adding bacon and cheese. I am hungry just typing about it!

How to make Cheesy Bacon Potato Casserole

Simple ingredients that are pantry staples really show out in this dish. I love making beautiful, scrumptious food by foraging in my fridge. What you may think is a hodgepodge of ingredients can become a real thing of beauty. So let’s get to it!

~ Ingredients ~

  • 6 medium Yukon gold potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 2/3 cup mayonnaise
  • 6 slices of bacon, cooked and crumbled
  • 1 tablespoon minced garlic
  • 1/2 cup chopped green onion
  • 1 teaspoon salt
  • 1 teaspoon pepper

~ Method ~

  1. Preheat oven to 350 degrees Fahrenheit. Mix all ingredients in a large bowl.
  2. Lightly grease a 9 x 13 casserole dish. Pour in casserole.
  3. Bake for 1 hour or until cheese has melted and brown. Enjoy!
