Cheesy Bacon Potato Casserole

Ingredients

  • 6 medium Yukon gold potatoes peeled and diced
  • 1 cup shredded cheddar cheese
  • 2/3 cup mayonnaise
  • 6 slices of bacon cooked and crumbled
  • 1 tablespoon minced garlic
  • 1/2 cup chopped green onion
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees. Mix all ingredients in a large bowl.
    6 medium Yukon gold potatoes, 1 cup shredded cheddar cheese, 2/3 cup mayonnaise, 6 slices of bacon, 1 tablespoon minced garlic, 1/2 cup chopped green onion, 1 teaspoon salt, 1 teaspoon pepper
  • Lightly grease a 9 x 13 casserole dish. Pour in casserole.
  • Bake for 1 hour or until cheese has melted and brown. Enjoy!
