No Sugar Added Oatmeal Cookies are a great treat. With no added refined sugars, they are only sweetened by natural sources. So, technically, there are some sugars in them but they are natural.

How to make Them
Like most baking or cookie recipes, the list of ingredients looks kind of intimidating. In true Buttered Home fashion though, I am here to tell you, do not let the list scare you. It all comes together easily to make one of the best oatmeal cookies. You will enjoy the fruits of your labor for sure!
~ Ingredients ~
- 1 & ½ cups quick cooking oats
- 1 cup almond flour
- ¾ teaspoon ground cinnamon
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 3 ripe bananas
- 2 eggs
- ¼ cup melted butter, unsalted
- ½ cup coconut flakes
- 1 teaspoon vanilla
- ½ cup sugar free butterscotch chips, optional
~ Method ~
- Preheat oven to 350 degrees and place parchment paper on an ungreased cookie sheet.
- Combine dry ingredients in a large bowl. Oats, Almond flour, baking soda, cinnamon and salt. In a medium bowl mash bananas and add lightly beaten eggs, melted butter and vanilla. Mix well.
- Add wet ingredients to the dry mixture and mix well. Mix in butterscotch chips and coconut and stir well to combine.
- Using a spoon, scoop out 1 inch balls of cookie dough and shape into mounds on prepared parchment paper.
- Bake for 14 to 17 minutes until brown on the bottom and slightly firm to the touch. Yield 2 to 3 dozen cookies.
Tips and Tricks
I really do suggest that you stick to the butter here. Butter is a healthy fat and possesses the necessary binding agent you need for the best cookie texture.
Make sure your flours and baking powders and sodas are always fresh. If they are old, they could prohibit your baked goods from rising. This is a good rule of thumb for all baking ingredients, not just for cookies.
Yes, pecans or other nuts would add a great texture to this cookie. You can also experiment with almond extract or other flavors that you like. Like most cookie recipes, this would be great with raisins or chocolate chips as well!
The cookies will keep at room temperature in an airtight container for about a week. Or Freeze them for up to 2 months.
