How to make Low Carb No Bake Peanut Butter Cookies

Made with only 7 ingredients and no baking required, these cookies come out with a soft, but chewy texture you’ll crave again and again if you have a sweet tooth.

In fact, topping the cookies with crushed peanuts for an added crunch is the perfect way to ensure that you’ll be doubling the batch the next time you make them. They’re a low-carb, keto recipe that the whole family will want to devour.

You only need 7 keto pantry staples to whip up this no-bake peanut butter cookie recipe, so you should already have everything on hand.

  • Natural creamy peanut butter
  • Salted butter
  • Sugar alternative like Swerve
  • Avocado oil
  • Almond flour
  • Vanilla extract
  • Crushed Peanuts

Instructions

In a large bowl, combine all the ingredients except the crushed peanuts.

Mix well and place it into the fridge to set for 30 minutes.

Place peanuts into a zip top bag and use a rolling pin to crush. Place in a bowl.

Once the batter hard hardened a bit, use a cookie scoop to portion out the dough and roll it into balls.

Storing The Low Carb Cookies

These peanut butter easy cookies are best stored in the fridge until you’re ready to eat them. Place them in an airtight container and if possible, separate layers with parchment paper so that they don’t stick together. Store them in the fridge for 1-2 weeks and serve them chilled.

You can also freeze the cookies in a freezer-safe bag for a delicious treat later. Again, separate layers with parchment paper. When you’re ready to enjoy them, let them thaw overnight in the fridge.

Which is the best peanut butter?

Natural peanut butter works best and ideally, you want a fresh jar. This is because the oils from a fresh jar help to blend the cookies together. You can use crunchy peanut butter too and skip adding in the crushed peanuts.

How thick should the cookies be?

You don’t need to flatten the cookies if you don’t want to. You can enjoy them as cookie dough and leave them rolled into balls for a pop-in-your-mouth treat too. If you decide to flatten them, you can make them as thick or thin as you like. You could even make the balls smaller to make small cookies for kids.

How do I serve the cookies?

No-bake peanut butter cookies are best served chilled. If you leave them out at room temperature for too long, they tend to lose their shape and become too soft.

Why are my peanut butter cookies falling apart?

The longer the low-carb peanut butter cookies sit in the fridge the better. If you find your no-bake peanut butter cookies are falling apart, they need to chill longer so that the ingredients can set together.

Delicious Flavor Variations To Try

Keto no-bake cookies are delicious all on their own, however, some of the add-ins below can change the flavor if you’re getting bored.

Chocolate chips: Add some sugar-free chocolate chips (or dark chocolate chunks) into the cookies or just to the top of them when you flatten them for a great flavor combination.

Cinnamon: This spice pairs well with anything and brings peanut butter cookies a whole new level of comfort.

Almond hazelnut butter: Just because they’re peanut butter cookies doesn’t mean you can switch up the nut butter sometimes. Almond butter is delicious but almond hazelnut is a rich-tasting combination and loaded with healthy fats. That said, cashew butter is tasty too but not always the best choice for a low-carb diet.

Nut-free: If you need to make these no-bake keto cookies nut-free you can replace the peanut butter with sunflower seed butter and add in a different type of crunch in place of peanuts (like chopped sunflower seeds). Know that doing so, may not be the best option for low-carb keto. 

No-bake chocolate peanut butter cookies: If you want to completely switch the flavor, add a dash of cacao powder to the mix to make chocolate keto no-bake cookies.

Serving Size 12

Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup salted butter softened
  • 1/2 cup swerve granulated
  • 1 tbsp avocado oil
  • 2 cups almond flour
  • 1 tsp vanilla extract
  • 1 cup peanuts crushed

Instructions

  • In a mixing bowl, combine the peanut butter, butter, sugar substitute, avocado oil, almond flour and vanilla. Mix well.
    1 cup natural peanut butter, 1/2 cup salted butter, 1/2 cup swerve, 1 tbsp avocado oil, 2 cups almond flour, 1 tsp vanilla extract
  • Chill in refrigerator for 30 minutes.
  • Remove from the refrigerator and use a scoop to take out and roll in individual balls. Roll balls in crushed peanuts and place on a sheet pan lined with parchment. Press each ball down to desired cookie thickness.
    1 cup peanuts
  • Return pan to refrigerator and chill for 30 minutes to overnight.
