Lazy Man's Cabbage Rolls
Don't you just love stuffed cabbage? Or cabbage rolls? I know we do but goodness, they are a lot of work! Here we show you the Lazy Man's version of cabbage rolls. This Mexican Unstuffed Cabbage is so much easier and not nearly as much trouble to make.
How to Make Unstuffed Cabbage with Chorizo
One of the many reasons I love dump and go recipes is that I can combine so many different flavors in one pot and they marry into a glorious union of tastes. Just like these Crock Pot Cowboy Beans, this unstuffed cabbage is one that is a great example of that type of cooking. Cooking everything in one pot makes your life a whole lot easier! Let's get to it!
~ Ingredients ~
- 1 pound ground beef
- 9 oz Chorizo Beef sausage
- ½ cup chopped onion
- 1 Bell pepper, chopped
- 2 tablespoons minced garlic
- 14 oz can diced tomatoes
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon dried oregano
- 1 teaspoon pepper
- 1 medium head of cabbage, chopped
- 2 cups Shredded Mozzarella cheese
~ Method ~
- In a large Dutch oven, saute ground beef, chorizo, onion, bell pepper and salt and pepper until browned. Add garlic and cook for one minute. Drain and return to dutch oven.
- Add diced tomatoes, seasonings and mix well. Put chopped cabbage on top of meat mixture. Cover and cook on low heat for 30 minutes, stirring often. Turn off heat.
- Sprinkle with mozzarella cheese and cover for 5-10 minutes to allow for cheese to melt. Enjoy!
Tips and Tricks
More than likely, it needs a bit longer to cook. Be patient with this and give it the full 30 minutes. If it is still tough, cook in 5-10 minute increments until cabbage is soft and done.
Chorizo is Mexican Pork or Beef sausage. Most varieties are somewhat spicy. You can find it at most supermarkets with different levels of spice. A mild or medium is not too much as spicy is different from hot.
Once this cools to room temperature, place it in an airtight container. It will last in the refrigerator for up to a week.
