Low Carb Bacon Cheeseburger Casserole

Our low carb bacon cheeseburger casserole is perfect when you have burger cravings but are on a keto diet or watching your carbs. We take ground turkey and dress it up with all of your favorite bacon cheeseburger fixings!

Casseroles are king in southern cuisine. I will be real honest here, most southern casseroles are not all that healthy. A lot like the great american cheeseburger, casseroles are a classic but the cheeseburger isn’t that great for you either.

A few years ago, I changed my relationship with food and have been looking for healthy substitutes for the things I love. Like our TACO SQUASH CASSEROLE, This keto bacon cheeseburger casserole takes two great things and gives you a healthy, complete meal the whole family will love. We don’t have to even mention that it is low carb!

Ingredients

You may think eating healthy takes a bunch of different ingredients that you have to make a special trip to get. That is not so with this one, we use normal everyday ingredients to bring you an all in one recipe with simple ingredients with all of the flavors of a cheeseburger without guilt!

What You’ll Need

  • Bacon – cooked and crumbled.
  • Ground turkey – for a lean protein option.
  • Dill pickle relish – for the full burger experience.
  • Fresh Tomatoes – for that pop of freshness, you expect in a burger.
  • Fresh Garlic – minced garlic add so much flavor with just a slight addition.
  • Salt and Pepper – simple and so good.
  • Shredded cheddar cheese – for the cheese part of the burger!
  • Eggs – to help bind it all together.
  • Heavy Cream – for a smooth casserole.
  • Marinara sauce – unexpected but perfect ingredient.
  • Lettuce or spring mix – to serve with the casserole to complete the burger.

Instructions

This low carb bacon cheeseburger casserole can be prepped ahead of time and is a great meal prep recipe to have for the whole week!

Preheat oven to 400 degrees. Cook bacon and drain. Crumble when cooled. Cook ground turkey and drain if need be. Add to a large bowl with chopped tomatoes.

Add dill pickle relish.

Mix in fresh, minced garlic.

Season with salt and pepper.

Add in 1 cup of grated cheddar cheese.

Spread evenly in a lightly greased casserole dish.

Lightly whisk eggs and add to heavy cream.

Add in two tablespoons of marinara sauce. Mix until well combined.

Pour over meat mixture evenly.

Sprinkle the other 1 cup of grated cheddar on top.

Allow to rest for 5 or so minutes. Serve over lettuce or spring mix. Enjoy!

Substitutions

  • Tomato paste – if you don’t have any marinara or pasta sauce on hand, feel free to use a tablespoon of tomato paste instead. A good use for a piece of a can leftover from another recipe.
  • Sour cream – if you do not have heavy cream, substitute with sour cream instead. It works well and you can use cup for cup in this recipe.
  • Hot sauce – use your favorite hot sauce in place of the marinara to make this a spicy casserole!

Ingredients

  • 5 slices turkey bacon cooked
  • 1 pound ground turkey
  • 1/2 cup dill pickle relish
  • 2 medium tomatoes chopped
  • 2 TBSPS fresh garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups cheddar cheese grated
  • 2 eggs lightly beaten
  • 1 cup heavy cream
  • 2 TBSPS marinara sauce low sugar
  • spring mix

Instructions

  • Preheat oven to 400. Brown and drain ground turkey, set aside. Lightly spray a 9×13 casserole dish with cooking spray. Cook bacon, drain and crumble.
    1 pound ground turkey, 5 slices turkey bacon
  • In a large mixing bowl, add ground turkey, dill pickle relish, tomatoes, garlic, salt, pepper and half of the grated cheese. Mix well. Spread evenly in prepared casserole dish.
    1/2 cup dill pickle relish, 2 medium tomatoes, 2 TBSPS fresh garlic, 1/2 tsp salt, 1/4 tsp pepper, 2 cups cheddar cheese
  • In a smaller bowl, combine, heavy cream, eggs and marinara. Mix well. Pour over meat mixture in pan evenly. Top with remainder of cheese and top with crumbled bacon.
    2 eggs, 1 cup heavy cream, 2 TBSPS marinara sauce, 5 slices turkey bacon
  • Bake for 20 to 25 minutes until brown and cheese has melted. Serve over lettuce or spring mix.

🍴 PRO TIP!

This is a meal prep-ers dream. You can brown the meat ahead of time as well as make the egg mixture ahead and mix it all together when you are ready to cook!

🗹 RECIPE FAQ’S

Can I make this ahead of the time?

Yes, as we mentioned before, this is a great meal prep recipe option as well as a make ahead. I like to brown my turkey in bulk to use for various recipes. You can do the same for the cream mixture and then just dump, pour and cook when you are ready. It is also great to put in smaller servings to have as a convenient option multiple times a week.

Do I have to use ground turkey?

No. Just like our LASAGNA recipe, you may use ground beef. We prefer a lean ground beef option to keep it lean and low carb.

Is this also considered keto?

That is a tough one to answer. All keto recipes are low carb but are somewhat restrictive on what fats you can and can’t use. Using ground turkey as well as heavy cream, it may qualify. I am not a dietician but this does come in at 7 net carbs and packs 25 grams of protein so its a win either way!
