Low Carb Bacon Cheeseburger Casserole

Ingredients

  • 5 slices turkey bacon cooked
  • 1 pound ground turkey
  • 1/2 cup dill pickle relish
  • 2 medium tomatoes chopped
  • 2 tablespoons fresh garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cheddar cheese grated
  • 2 eggs lightly beaten
  • 1 cup heavy cream
  • 2 tablespoons marinara sauce low sugar
  • spring mix

Instructions

  • Preheat oven to 400. Brown and drain ground turkey, set aside. Lightly spray a 9x13 casserole dish with cooking spray. Cook bacon, drain and crumble.

  • In a large mixing bowl, add ground turkey, dill pickle relish, tomatoes, garlic, salt, pepper and half of the grated cheese. Mix well. Spread evenly in prepared casserole dish.

  • In a smaller bowl, combine, heavy cream, eggs and marinara. Mix well. Pour over meat mixture in pan evenly. Top with remainder of cheese and top with crumbled bacon.

  • Bake for 20 to 25 minutes until brown and cheese has melted. Serve over lettuce or spring mix.
