In a large Dutch oven, saute ground beef, chorizo, onion, bell pepper and salt and pepper until browned. Add garlic and cook for one minute. Drain and return to dutch oven.
Add diced tomatoes, seasonings and mix well. Put chopped cabbage on top of meat mixture. Cover and cook on low heat for 30 minutes, stirring often. Turn off heat.
2 tablespoons minced garlic, 14 ounces can diced tomatoes, 1/2 teaspoon smoked paprika, 1/2 teaspoon dried oregano, 1 medium head of cabbage
Sprinkle with mozzarella cheese and cover for 5-10 minutes to allow for cheese to melt. Enjoy!
