Mason Jar Chicken Parmesan Soup
Mason Jar Chicken Parmesan Soup is a beautiful and simple way to use those chicken leftovers. Combining a few simple ingredients, we show you how to make this gorgeous portable soup!

People who are busy tend to have a harder time eating healthy. This is largely due to the time that they think it takes to do all of the prep work to stay on track. This recipe shows you that you don’t need a ton of time to eat smarter. Just like our MEDITERRANEAN CHICKEN AND VEGETABLES and OVEN ROASTED OKRA FRIES, this recipe illustrates just how easy and quick it is to stay on track.
Ingredients
Soup in a jar is not a new concept. And if you have been with us very long, you know that making healthy subs for ingredients is something I love to do. This recipe tackles that as well as how to eat great on the go!
- 1/2 cup Low Sugar Marinara Sauce
- 2 Tablespoons Light or reduced fat Italian Dressing
- 1 cup thinly sliced or spiralized Zucchini or Squash
- 8 ounces cooked, shredded Chicken Breast
- 1/4 cup grated Parmesan Cheese
- 2 Tablespoons chopped Fresh Basil
- 2 cups Hot Water or low sodium chicken broth
Instructions
This one is easy. No cooking required. We use left over cooked chicken to repurpose those leftovers for a wonderful soup!
n two clean large mouth pint mason jars, layer as follows. 1/4 cup of Marinara sauce in each, 1 tablespoon Italian dressing in each. Half of the sliced squash in each, half of the cooked chicken in each, and half of the parmesan and basil.

Pour Hot water over all leaving a small space at the head of the jar. Shake and let sit for 5 minutes. Serve and enjoy!
Eat right away or store in the refrigerator to reheat and serve for later.
Tips and Tricks
Yes but just for a few minutes. By adding the hot water to the jar, that cooks the zucchini enough to leave it with a good little chew. Cooking it on the stove top may make it cook too much. If you do, just make sure it just heats through. No boiling!
Certainly, just make sure you cook the pasta al dente before adding to the jar. If you are incorporating whole wheat pasta as a complex carb in your diet, feel free!
Yes! I have done this with spinach and mushrooms to add more vegetables to this. Like all of our other recipes, this is merely a starting point to get you thinking!
