There are all kinds of things I love to share with you that give you that restaurant feel from your own kitchen. For example, we have given you, BEEF PASTA BAKE, HASHBROWN SAUSAGE CASSEROLE and LOUISIANA CRAB CAKES just to name a few! These are great options to get that restaurant feel at home. But just like with restaurant food, sometimes they are not the greatest if we are watching what we eat.
A New Way of Thinking
Since embarking on my own lifestyle change journey, I have tried to rethink my food choices. I have found that a healthy balance removes the diet mindset and changes things. So I have decided this year to share with you a few of the things I have done to help me on my way. This re-thinking of food and the ingredients we use has been a game changer and helped me out of the “diet” way of thinking. Recipes like this and my LIGHT AND HEALTHY CHICKEN POT PIE, I hope illustrate how easy eating well can be! Let’s get to it!
Ingredients
Simple, easy ingredients for this one. You could substitute frozen veggies for the fresh if you needed to. And if you have some need to know how to prep those fresh ones for the freezer, you don’t want to miss our post on HOW TO FREEZE FRESH VEGETABLES.
- 3 to 4, 8 ounce chicken breasts or tenderloins
- 1 zucchini, cut into bite size pieces
- 1 yellow squash, cut into bite size pieces
- 1 bell pepper, sliced, any color
- 2 Tablespoons olive oil, divided
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ -1/2 cup crumbled Feta cheese
- 1 teaspoon dried oregano
- 2 tablespoons minced garlic
- 2 Tablespoons lemon juice
Instructions
Delicious supper has never been so easy!
Preheat oven to 375 degrees. Place chicken on one end of a sheet pan. Parchment paper optional! Dice and prep vegetables and place in a large bowl. Drizzle chicken and vegetables with a bit of olive oil and lightly season with salt and pepper.
Arrange vegetables next to chicken on a sheet pan. Making sure they are in a single layer.

Bake in oven for 35-40 minutes checking often to stir vegetables or turn chicken. Chicken is done when it reaches internal temperature of 160-165 degrees. Allow to rest before serving.
While baking, assemble ingredients for dressing. In a medium bowl, combine minced garlic, lemon juice, oregano and olive oil. Whisk together well. When protein and vegetables are done, arrange as desired on a serving platter.
Drizzle dressing over chicken and vegetables right before serving and garnish with Feta Cheese.
Tips and Tricks
Yes! To keep the recipe almost the same, turkey tenderloins work very well. Beef and seafood may require different cooking times. If you check no matter what you are using every 10 minutes or so, each one should come out perfect! Get Creative!
You have many options here. Feta and blue cheese are great options for low carb or calorie count. A light cheese like a low fat cheddar or even plain mozzarella would work well too. Any other fancy cheese will add to your calories or fat so always use in moderation to keep it healthy.
Not really. We need some healthy fat in our diet to fuel our bodies. Often, NON fat items are latent with hidden sugars to make up for the fat. Learn to read your labels or just go with low fat options instead!

Beautiful, but so bland. Squash has such wayery, bland flavor, as does chicken breast, of course. This needs some spark to provide enough flavor to make it call for bite after bite.
