Ingredients

Two things! Sweet Potatoes and water are all you need for the best and quickest way to get this southern delicacy!

  • Medium Sweet Potatoes
  • Water
  • Electric Pressure Cooker
  • Fork
  • Butter or other toppings as desired

Instructions

This is as easy as it gets! We just do a tad bit of prep work and then we set to cook and let the Electric Pressure Cooker do all of the work!

Wash sweet potatoes well and pierce skin just slightly with a fork on all sides.

Add trivet to inner liner of Instant Pot and add one cup of water.

Add sweet potatoes in the liner of the pot.

Set to Pressure cook for 18-20 minutes.

Allow pressure to naturally release for 10-15 minutes. Carefully release remaining pressure and open lid. Remove potatoes and allow to rest for 5 minutes.

Storage

Bring potatoes to room temperature and seal in an airtight container. Store in refrigerator and should last for about a week.

Tips and Tricks

FAQ

Is this method the same for regular potatoes?

Yes! Most regular potatoes will not need as much cooking time. For regular potatoes, because of a thinner skin, should only need about 10-15 minutes on a cook time.

Why were mine not done at 20 minutes?

Depending on the size of the potatoes, this will determine your cook time. Even with some really large ones, the cook time shouldn’t be more than about 25 minutes. The beautiful thing about your pressure cooker is that you can pop them back in if they are not done and add a 5 minute cooking time that should come back up to pressure pretty fast.

Ingredients

  • 4 to 6 medium Sweet Potatoes
  • 1 cup water

Instructions

  • Wash sweet potatoes well. Dry and pierce on all sides
    with a fork.
  • Place trivet in liner of instant pot.
  • Pour in 1 cup of water.
  • Place potatoes on trivet. Close lid. seal vent and set timer to 18-20 minutes.
  • When cook time is complete, allow pressure to naturally release for 10-15 minutes. Open seal
    carefully to release any remaining steam.
  • Carefully remove potatoes and allow to rest for 5 minutes.
