Easy Berry Trifle with Angel Food Cake

One of the best things about Summer is all of the Berries freshly available. The abundance of most all fresh produce makes Summer a cooks dream. We love making this recipe as well as our STRAWBERRY UPSIDE DOWN CAKE.

How to make this Berry Trifle the Easy way

I am a huge proponent of scratch made cooking but sometimes, the easy route is the best route.

For this recipe, I pick up a bakery fresh angel food cake to use. I know, it feels like cheating.

Feel free to make your own to use in this recipe but I don’t consider it cheating to save a little time and precious cool air in my kitchen!

How to Make It

~ Ingredients ~

  • 1 & 1/2 cup milk
  • 1 cup of vanilla greek yogurt
  • 1 small box French Vanilla pudding mix
  • 1 tablespoon honey
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 & 1/2 cup whipped cream
  • 1 Angel Food Cake, cut into cubes
  • 2 cups Sliced Fresh Strawberries
  • 2 cups Blueberries
  • 2 cups Blackberries

~ Method ~

  1. Using a hand mixer, blend pudding mix and milk until smooth and thick. Set aside. In a separate bowl, use the hand mixer to beat the cream cheese, yogurt,sour cream and honey until smooth.

  2. Mix the pudding in with the cream cheese mixture to combine. Gently fold in whipped cream just until combined. Do not overmix.

  3. Layer in a trifle bowl or large clear bowl

    1. Angel Food cake piece

    2. Pudding and cream mixture

    3. Berries

  4. Repeat layers two more times finally topping with cream and berries.
  5. Refrigerate

Tips and Tricks

Will the Cake get soggy?

If you make this the day before, the custard will soften the cake but it will not get soggy. It really is better made the day before.

How Long will it keep?

This will keep in a covered dish in the refrigerator for about 4 or 5 days.

How can I make it a bit sweeter?

You can make a simple fruit syrup by heating preserves or jam a bit and pouring over the berries. This works well if your berries are still a bit tart.

Can I make this ahead?

You can! Like most trifles, this gets better the longer it sits. Make it, cover it tightly and refrigerate up to two days before serving.

Can I use frozen berries?

Yes. Trifles like this are perfect year round. To use frozen berries, thaw completely and prepare as normal.

Can I freeze it?

The simple answer is no. Because of the custard, cake and berries, if frozen, the dessert would take on too much moisture and end up being soggy.

Can I use other fruit?

You sure can. Other berries like raspberries or grapes are a perfect fit. If you use more porous fruits like apples or bananas, be aware they will brown.

Can I use another type of cake?

Yes, I love making this with our BUTTERMILK POUND CAKE. Pound cake has a similar texture to angel food and will hold up really well to the custard and berries.

Why is this the perfect dessert?

It is simple. That is the answer. It’s perfect served right away and just gets better the longer it sits in the fridge.

I also think it is good using other kinds of cake. Goodness knows, I have broken my share of cakes. One thing I do is NEVER throw a broken cake out. I simply use it to make a trifle! No sense crying over broken cake, right?

  • 1 cup Vanilla greek yogurt
  • 1 tbsp honey
  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1.5 cup Whipped cream
  • 1 Angel Food Cake cut into cubes
  • 2 cups Fresh Strawberries sliced
  • 2 cups Blueberries
  • 2 cups Blackberries

Instructions

  • Using a hand mixer, blend pudding mix and milk until smooth and thick. Set aside. In a separate bowl, use the hand mixer to beat the cream cheese, yogurt,sour cream and honey until smooth.
