Easy BLT Egg Bake
This EASY BLT EGG BAKE is perfect for breakfast, brunch and even supper. And it really is so easy! It looks complicated with all the little cooking steps, but it’s really quite simple. We take a tried-and-true roux base, magically transform it into a lovely white gravy and create a BLT Egg Bake that is truly unforgettable. Remember, the L in this BLT stands for “Lucious Gravy!”

Whether you want to have a big ol’ BLT brunch, or mix it up and have that “breakfast for supper” that we all know and love, we are going to help you make it happen with this delicious Easy BLT Egg Bake. It’s a fantastic make-ahead, take-along or take-to-someone meal that’s good any time of the year, and only takes 10 minutes to bake.
Just like our recipe for making a WHITE ROUX, this one can seem a little complicated, but it is super-easy and quick to get to the table. You’ll be scooping up a big bite of beautiful, melty goodness in no time!

- Luscious gravy – like we said earlier, the luscious L in this BLT is the transformation of the roux base into a magical gravy. It’s so good that no one will care at all that there’s no lettuce in this BLT!

Instructions
This one pan wonder is easy with very little prep required.
Preheat the oven to 325°.

Toast 6 slices of bread and spread mayonnaise on top of each one.

Cut the toast into cubes and spread into the bottom of a 9×13 greased baking dish.

Place 6 slices of cheese over the toast in the prepared pan.

Crumble and sprinkle bacon evenly over the top of the cheese.

In a skillet, melt 2 tablespoons of butter.

Add in 2 tablespoons of flour.

Cook butter and flour for a minute or two until you can no longer smell the flour.

Slowly add in the milk and whisk to combine.

Season with salt and pepper and cook until the gravy reaches your desired thickness.

Pour the gravy over the top of the bacon in the prepared casserole dish.

In a skillet, melt one tablespoon of butter.

Crack your eggs and cook them to your desire done-ness.

Place cooked eggs over the top of everything else in the casserole dish.

Slice your tomatoes and place them in a single layer over the eggs.

Top with cheddar cheese.

And sliced green onions.

Bake for 10 minutes or until cheeses have melted. Allow to cool for a minute or so. Serve and enjoy!

Big D likes his eggs fried and a little less done than I do, but you can prepare your eggs in whatever way suits your fancy!
Substitutions
With this simple recipe, I can think of all kinds of customizations and I know you likely will, too. Here are a few to get you started.

- Eggs – for heathier egg options, try egg whites or egg substitutes. You can also fry or scramble the eggs to suit anyone’s preference!
- Bacon – sticking with the healthy angle, you can always use turkey bacon or veggie bacon options from your favorite grocer in place of the real deal!
- Lettuce – if you really want to get the L into this dish beyond that luscious gravy, then shred up some lettuce and spread it on top after the dish is cooked for that real BLT experience!
- Cheese – even though we stuck with mostly cheddar for this example, feel free to use any kind of cheese that you love. Colby Jack, Mozarella and Swiss cheeses work great as well!

- Don’t freeze it! Like me, this BLT doesn’t respond well to extreme cold!
- To reheat: pop the dish in the oven for 5-10 mins on a low temp until heated through.

Easy BLT Egg Bake
Ingredients
- 6 slices bread toasted
- 1/4 cup mayonnaise
- 6 slices cheddar cheese
- 14 slices of bacon cooked, drained, cooled and crumbled
- 3 Tbsps butter divided
- 2 Tbsps all purpose flour
- 1/2 tsp salt
- 1/4 tsp pepper
- 1.5 cups milk
- 4 eggs
- 2 tomatoes sliced
- 1/2 cup shredded cheddar cheese
- 1/2 cup green onions sliced
Instructions
- Preheat oven to 325°. Toast bread and top each slice with a bit of the mayonnaise. Cut each slice into cubes and place in the bottom of a greased 9 x 13 baking dish.6 slices bread, 1/4 cup mayonnaise
- Top the toast with sliced cheese and crumbled bacon. In a skillet, melt 2 tablespoons of butter. Add in 2 tablespoons of flour. This should make a paste. Cook for a minute or so or until you cannot smell the flour anymore. Gradually add milk, salt and pepper. Cook until it reaches desired thickness. . Pour over the bacon.6 slices cheddar cheese, 14 slices of bacon, 3 Tbsps butter, 2 Tbsps all purpose flour, 1/2 tsp salt, 1/4 tsp pepper, 1.5 cups milk
- In another small skillet, fry eggs until they reach your desired done-ness. Place on top of gravy. Add slices of tomato on top and sprinkle with the cheddar cheese and sliced green onions. Bake for 10 minutes until cheese is melted.4 eggs, 2 tomatoes, 1/2 cup shredded cheddar cheese, 1/2 cup green onions
- Cool for a few minutes, slice and serve.

Notes

🍴 PRO TIP!
Crack the eggs with the edge of the spoon while over the skillet to keep the broken shell area on top, allowing the egg to drop out cleanly into the pan. You can also spoon a little butter over the top to get things more brown around the edges and a little more done in the oven–or just flip them in the skillet!
🗹 RECIPE FAQ’S
Once the roux becomes a paste, and when you can no longer smell the flour, and only smell the butter, you’ll be ready to add in your whole milk, pepper and salt to whisk until thick to make that magical gravy.
Cook your gravy less than a minute in the skillet to get it nice and thick. You can do a spoon test to check the thickness. Get some gravy on the back of the spoon, run your finger through it and make sure it doesn’t run from side-to-side on the spoon. This is a good opportunity for a taste test as well!
