    Bacon Wrapped Onion Meatball Bombs

    Bacon Wrapped Onion Meatball Bombs are a great addition to any BBQ. Delicious hamburgers wrapped in onion shells and hugged by smoky strips of bacon! Deeeelicious!

    I love a great BBQ. But sometimes it is a Tuesday and its raining outside and we really want something that resembles a good BBQ treat. I am here for you if you feel that way sometimes too! Just like we showed you with that gorgeous GRILLED HAWAIIAN BACON AND CHICKEN, you can bring the grilling favorites inside too!

    How to make them.

    The absolute hardest part of making these delicious bombs of goodness is the assembly. I promise you a little patience goes a long way. Simple ingredients make this a HUGE hit for any BBQ or even on a Tuesday night for your family!

    • 2-4 Small Yellow or White Onions - these will become the glue that holds everything together. Yellow are more flavorful and a little sweeter. If you don't like that much onion use white onions for milder results
    • 1 pound Ground Beef - Who says its just for burgers???!!!
    • ½ cup breadcrumbs - Adds a little something extra. Feel free to use seasoned, plain or even Panko.
    • 1 egg - just like in a great meatloaf, it helps hold the meat and spices together.
    • salt to taste - for flava!
    • pepper to taste- also for flava!
    • ½ cup shredded cheddar cheese - a cheesy goodness inside the burger portion of the bombs just can't be beat
    • 12oz package Bacon- In all of its glory, the gift wrap, the icing on the cake! It cooks INTO the bombs and it is awesome!
    • ½ cup BBQ sauce - for shine and a little zip of flavor!
    • chives or green onions for garnish- we all need a little vegetables in our diet everyday!

    Once you do one or two, you will have the technique down pat. I like to cross hatch the bacon so I don't have to use tooth picks but if you find you need them, use them. Just remember to take them out before digging in!

    1. Preheat oven to 425 degrees
    2. Mix Ground beef, egg, breadcrumbs, cheese, salt and pepper in a large bowl. Mix until well combined
    3. Carefully cut ends off of each onion and split each onion diagonally. Carefully remove the outer 2-3 layers of the onion taking care not to break them. Separate the layers for the outer shell of the bomb.

    1. Take enough meat mixture and form a ball to fit inside the two halves of onion, just until seams slightly meet.
    2. Wrap each onion with 1-3 pieces of bacon. I like to cross hatch two over the top and wrap another around the side. Can secure with a toothpick if needed.
    3. Place on a rack in sheet pan or foil lined sheet pan. Bake at 425 for 45 minutes or until internal temperature is 165 degrees.
    4. Remove from oven and baste with your favorite BBQ sauce and bake for 5 minutes more. Allow to rest for 10-15 minutes, serve and Enjoy!

    Tips and Tricks

    Can I use another kind of Onion?

    You sure can. Like all of our other recipes, you can modify this to make it your own. If you prefer red onion, use it. We like to use what is on sale and you can always do that as well.

    Do I have to secure the bacon with toothpicks?

    You certainly don't have to. I like to have enough bacon that I can trim what I need. You may find that you only need half a piece. This recipe is a guide. The amount of bacon and what is needed to secure it really depends on the size of your onion.

    Can these be cooked on the grill?

    Yes! I would cook them on indirect heat and make sure your bacon gets good and crispy. That is why we include the done temp of 165 degrees internally so you can be sure they are done no matter if you cook them on the grill or in the oven
