Simple and Delicious Cheeseburger Soup
Today we have an easy comfort meal planned for you with our SIMPLE AND DELICIOUS CHEESEBURGER SOUP recipe. There’s a little bit of prep involved to get things rolling, but in less than 30 minutes, you will have a hearty, creamy, delicious soup that also totally tastes like a cheeseburger. We know you will also totally love it!

Our roux base and potatoes really make this soup nice and velvety. The veggies give it the flavor and comfort of soup, but the cheese and ground beef truly take it to that cheeseburger level. And it’s better for you!
Much like our STEAK AND POTATO SOUP, this one will give you all the feels of a warm, hearty soup, but this recipe satisfies your hankering for a burger at the same time!

The simple soup staples of potatoes, celery, carrots, sweet onions and a roux base combined with the cheese and ground beef will easily fulfill all your soup and cheeseburger cravings!

Instructions
Soup pot recipes are the best! Mix and dump in your ingredients, cook and serve! Simple!

Prep onions, celery, carrots and potatoes by dicing into small cubes, all similar in size.

Cook and drain ground beef and set aside. In a large dutch oven, heat 2 tablespoons of butter over medium heat to melt.

Add celery, carrots and onions to the dutch oven.

Season vegetables with Italian seasoning and parsley flakes.

Add a bit of salt.

And black pepper. Cook until vegetables are tender. About 5 minutes.

Add in 2 more tablespoons of butter and stir to melt.

Add in all purpose flour and mix well to coat the vegetables. Cook for a minute or so more until you can no longer smell the flour.

Add in the potatoes.

And the cooked ground beef. Mix well.

Pour in the chicken broth. Increase the heat to medium high. Bring to a boil. Reduce heat to simmer.

Simmer for about 10 minutes or until potatoes are fork tender.

Add in heavy cream.

And shredded cheddar cheese. Mix until melted.

Serve with sour cream and enjoy!

Substitutions
With this recipe, I can think of a few customizations to help get you going.
Veggies – omit the potatoes and carrots for a low-carb option.
Flour – use almond flour for another healthy, low-carb option.
Meat – feel free to substitute the beef with ground turkey for a healthier soup.

Make Ahead and Storage Tips
Make ahead of time: This soup is a great way to use your pre-cooked beef! Pre-cooking and draining your ground beef ahead of time is a great time-saver.
Storage: Place in an airtight container in the refrigerator for up to 4 days. When you reheat, you can add a little broth, if it’s too thick. Also, this soup does not freeze well, so it’s best to eat it all up or store it in the fridge for a few days.

Simple and Delicious Cheeseburger Soup
Ingredients
- 1 pound ground beef cooked and drained
- 4 tablespoons butter
- 1/2 cup onion chopped
- 1 cup carrots chopped or shredded
- 1 cup celery chopped
- 1 pound potatoes peeled, cubed
- 1 teaspoon italian seasoning
- 1 teaspoon parsley flakes
- 3 cups chicken broth
- 4 tablespoons all purpose flour
- 1 cup cheddar cheese grated
- 1/2 cup heavy cream
- salt to taste
- pepper to taste

Instructions
- Brown ground beef and drain. Set aside. Prep celery, carrots, onions and potatoes.1 pound ground beef, 1/2 cup onion, 1 cup carrots, 1 cup celery, 1 pound potatoes
- In a large soup pot or dutch oven, heat half of the butter until melted. Add in celery, carrots and onions. Season with Italian seasoning and parsley. Cook until tender.4 tablespoons butter, 1 teaspoon italian seasoning, 1 teaspoon parsley flakes
- Add in the other half of the butter and mix to melt. Sprinkle in all purpose flour and mix well. Cook for a minute or until you can no longer smell the flour. Add in potatoes and cooked beef. Stir to combine. Pour in chicken broth and bring to a boil. Reduce heat to simmer and cook for about 10 minutes or until potatoes are fork tender. Season as needed with salt and pepper.3 cups chicken broth, 4 tablespoons all purpose flour, salt, pepper
- Add in the heavy cream and shredded cheddar. Stir to melt. Serve warm with a dollop of sour cream.1 cup cheddar cheese, 1/2 cup heavy cream

🍴 PRO TIP!
This recipe seems like there’s lots of prep involved, but you can “cheat” and speed things up by picking up pre-shredded veggies and cheese at the grocery store. And if you like to pre-cook a big batch of ground beef to eat on during the week, this is an excellent way to use some of that meat!
🗹 RECIPE FAQ’S
Absolutely! Just use vegetable broth instead of chicken broth and veggie crumbles in place of the ground beef.
A small salad on the side goes well with the soup. You can also have your favorite bread along with it for dipping or sopping or whatever!
It’s the potatoes! They do not like to be frozen and can turn to mush when reheating. It’s best to eat it up when ready, but you can store the leftover soup in the fridge for 3 to 4 days.
