Simple and Delicious Cheeseburger Soup

Ingredients

  • 1 pound ground beef cooked and drained
  • 4 tablespoons butter
  • 1/2 cup onion chopped
  • 1 cup carrots chopped or shredded
  • 1 cup celery chopped
  • 1 pound potatoes peeled, cubed
  • 1 teaspoon italian seasoning
  • 1 teaspoon parsley flakes
  • 3 cups chicken broth
  • 4 tablespoons all purpose flour
  • 1 cup cheddar cheese grated
  • 1/2 cup heavy cream
  • salt to taste
  • pepper to taste

Instructions

  • Brown ground beef and drain. Set aside. Prep celery, carrots, onions and potatoes.

  • In a large soup pot or dutch oven, heat half of the butter until melted. Add in celery, carrots and onions. Season with Italian seasoning and parsley. Cook until tender.

  • Add in the other half of the butter and mix to melt. Sprinkle in all purpose flour and mix well. Cook for a minute or until you can no longer smell the flour. Add in potatoes and cooked beef. Stir to combine. Pour in chicken broth and bring to a boil. Reduce heat to simmer and cook for about 10 minutes or until potatoes are fork tender. Season as needed with salt and pepper.
    3 cups chicken broth, 4 tablespoons all purpose flour, salt, pepper
  • Add in the heavy cream and shredded cheddar. Stir to melt. Serve warm with a dollop of sour cream.
