Tater Tot Casserole with Ground Beef
My kids were easy. When they were little I didn’t have a hard time getting them to eat things that were good for them. They both seemed happy with whatever food we were having.
I’m sure there were times they complained but not so much that it sticks out in my mind. My kids were odd compared to others. To this day one of their favorite foods are these COLLARD GREENS.
I do have plenty of friends though, who have some picky little eaters on their hands. Getting them to eat more diverse proteins or some vegetables in their diets has been a struggle.
So many kids will only eat chicken nuggets. Getting a little beef in their diet can be a challenge.
That is where casseroles like this one come in and change the shape of things. Getting the kids involved in making foods like this will help them see that cooking is fun and eating what they cook is a proud moment. Its a win/win situation if you ask me.
How to make this Cheesy, Easy Tater Tot Casserole
This casserole is so easy and full of little cheats. I use frozen tater tots, canned corn and canned cream of mushroom soup.
Those three things on their own are good. Combining them makes a meal that your kids are sure to love. Sometimes, making meals out of pantry or freezer staples is as beautiful a thing as scratch made cooking. Especially in todays fast paced world.
Getting the family to sit down together is of great importance and meals like this one make it easier to do. Less time fussing over supper time and more time spent with one another.

~Ingredients~
- 1 pound ground beef
- 3/4 cup sour cream
- 1 can whole kernel corn, drained
- 1/2 cup milk
- 1 can cream of mushroom soup
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 pound bag of frozen tater tots
- 1 cup shredded cheddar cheese
~Method~
- Preheat oven to 375 degrees Fahrenheit. Lightly spray a 9×13 baking dish with non stick cooking spray.
- Brown ground beef with salt, pepper, garlic and onion powders. Drain.
- In a large bowl, mix ground beef with sour cream, cream of mushroom soup, milk and corn. Spread in prepared pan.
- Top with cheese and then arrange frozen tater tots on top. Bake 45 minutes or until tots are browned and casserole is bubbly.
- Allow to sit for 5-10 minutes to cool. Serve and Enjoy!

Ground beef. A great tip I have for any meal that requires browned ground beef is so simple. I buy ground beef in bulk. Portion it out in one pound portions, pre cooked. I brown the portions, cool and drain them and place into a zip top bag to freeze. This trick expedites weekday cooking like no other. Easy to thaw and reheat and add spices to, this is my favorite cooking hack ever!
Can this be frozen?
Food gifting! this is a phenomenal casserole to give as a food gift. Make it up, cover it with plastic wrap and then foil and label. Pop it in the freezer and it becomes a beautiful thing. A casserole you can have on hand to gift to people in their time of need or just to have for a busy week in your own home. A lot of times I will get enough to make two. One to have on hand and one for us to eat. Cook smarter, not harder!
Is this the same as a Hot Dish?
It sure is! Hot Dish is common in the North as Casserole is here in the South. A one pan meal heated that usually contains a cream of soup. No matter what you call it, it is easy and delicious.
