    Homemade Ice Cream Cookie Sandwiches with Chocolate Ganache take an ordinary serving of ice cream and dress it up to party! Sweet and crispy chocolate ganache makes this party time dessert and dresses it up with superb sweetness!

     One of the things that wake up that inner kid in me is Ice Cream. My Daddy Joe loved Ice Cream. When I would go stay with my grandparents, he and I were always a threat to have a banana split or a Coke Float before bed.

    Probably wasn’t a very good bedtime snack choice but boy did it instill a ton of wonderful memories for me. Now that he is gone, anytime I indulge in ice cream, I smile and think of him. Want a healthier spin on ice cream? Try our EASY BANANA ICE CREAM on for size!

     

    Easy Homemade Ice Cream Sandwiches

    Making Ice Cream sandwiches at home is not only easy but it shakes things up a bit. Add to it this crunchy wonderful thing called Ganache Icing, well, it is nothing short of heaven on earth. 

    This is one of those fun desserts you can make your own. But I will tell you how to make this beautiful chocolate ganache to use on all sorts of goodies!

    How to make Ice Cream Cookie Sandwiches and Chocolate Ganache at Home!

    Making fancy desserts can be so daunting. This is an easy cheater fancy dessert of sorts. I also love that the kids can help make it. It's fun in the kitchen and that is what we love to see folks doing.

    Cooking and eating together is our main focus here. This is a simple dessert kids of any age will love to make and eat! So here is how you do it!

    ~ Ingredients ~

    • 12 bakery cookies, any kind you like
    • Ice Cream, softened just a bit. Any flavor your little old heart desires!
    • ½ cup butter, softened
    • ¼ cup cocoa
    • 4 cups of Confectioners sugar
    • 2-4 tablespoons of Milk

    ~ Method ~

    1. Set out ice cream while you make the ganache
    2. In a medium saucepan, melt butter on low heat. Add in Cocoa and mix until smooth. Do not boil. Remove from heat once smooth. Add in confectioners sugar in batches mixing well to remove lumps. If it becomes thick, use a little milk to thin to desired consistency.
    3. Spread a thin layer of ganache on each cookie. Allow to set. You can expedite this process by placing iced cookies in the fridge for about 5 minutes.
    4. Spread a dollop of your favorite ice cream on one cookie and sandwich with another. Place on a sheet pan and put into the freezer for about 5 to 10 minutes to re harden ice cream before serving. You can also store in the freezer in an airtight container to have for later!

    Tips and Tricks

    How to soften Ice cream for sandwiches

    First, when you buy the ice cream, store it in a zip top bag in the freezer. It will keep it soft so there is no need to set out a room temp. Doing this in the beginning will save you a mess like the one you see in my pictures.

    What is the best kind of ice cream to use?

    Probably the staple for us would be good old fashioned vanilla ice cream. You get so much extra with the cookies you use as well as the ganache.

    How do you freeze them?

    After making them up, I place them on a sheet pan and put back in the freezer for 10 minutes or so and serve them immediately. If not, after hard set on the pan, you can place them in a freezer safe container or bag to have for later use. They will last for up to one month.

    Make Chocolate Ganache with Ice cream or for many other desserts.

    Why not? There hasn’t been too much that a little chocolate hasn’t made better in my life. Spreading this wonderful ganache adds chocolatey sweetness and a little sugar crunch for texture to this easy snack.

    It can be used for so much too, not just Ice cream sandwiches. I love to dip fruit in it and all it to dry for a fancy fruit plate. It is also a yummy topping for Cakes, brownies or any baked good you wanted to dress up a bit.

    These also make a wonderful addition to any party if you wanted to dress up the ice cream . However you use them, they will bring happiness and probably spark a few kid moments in you too!
