One of the things that wake up that inner kid in me is Ice Cream. My Daddy Joe loved Ice Cream. When I would go stay with my grandparents, he and I were always a threat to have a banana split or a Coke Float before bed. Probably wasn’t a very good bedtime snack choice but boy did it instill a ton of wonderful memories for me. Now that he is gone, anytime I indulge in ice cream, I smile and think of him.

Making Ice Cream sandwiches at home is not only easy but it shakes things up a bit. Add to it this crunchy wonderful thing called Ganache Icing, well, it is nothing short of heaven on earth. This is one of those fun desserts you can make your own. But I will tell you how to make this beautiful chocolate ganache to use on all sorts of goodies!
How to make Ice Cream Sandwiches and Chocolate Ganache at Home!
Making fancy desserts can be so daunting. This is an easy cheater fancy dessert of sorts. I also love that the kids can help make it. It's fun in the kitchen and that is what we love to see folks doing. Cooking and eating together is our main focus here. This is a simple dessert kids of any age will love to make and eat! So here is how you do it!
~ Ingredients ~

12 bakery cookies, any kind you like

Ice Cream, softened just a bit. Any flavor your little old heart desires!

½ cup butter, softened

¼ cup cocoa

4 cups of Confectioners sugar

2-4 tablespoons of Milk
~ Method ~

Set out ice cream while you make the ganache

In a medium saucepan, melt butter on low heat. Add in Cocoa and mix until smooth. Do not boil. Remove from heat once smooth. Add in confectioners sugar in batches mixing well to remove lumps. If it becomes thick, use a little milk to thin to desired consistency.

Spread a thin layer of ganache on each cookie. Allow to set. You can expedite this process by placing iced cookies in the fridge for about 5 minutes.

Spread a dollop of your favorite ice cream on one cookie and sandwich with another. Place on a sheet pan and put into the freezer for about 5 to 10 minutes to re harden ice cream before serving. You can also store in the freezer in an airtight container to have for later!

Spreading this wonderful ganache adds chocolatey sweetness and a little sugar crunch for texture to this easy snack. It can be used for so much too, not just Ice cream sandwiches. I love to dip fruit in it and all it to dry for a fancy fruit plate. It is also a yummy topping for Cakes, brownies or any baked good you wanted to dress up a bit.
