Ice Cream Sandwiches with Chocolate Ganache

Ingredients

  • 12 bakery cookies any kind you like
  • ice cream softened just a bit. Any flavor your little old heart desires!
  • 1/2 cup butter softened
  • 1/4 cup cocoa
  • 4 cups confectioners sugar
  • 2-4 tablespoons milk

Instructions

  • Set out ice cream while you make the ganache
    ice cream
  • In a medium saucepan, melt butter on low heat. Add in Cocoa and mix until smooth. Do not boil. Remove from heat once smooth. Add in confectioners sugar in batches mixing well to remove lumps. If it becomes thick, use a little milk to thin to desired consistency.
    1/2 cup butter, 1/4 cup cocoa, 4 cups confectioners sugar, 2-4 tablespoons milk
  • Spread a thin layer of ganache on each cookie. Allow to set. You can expedite this process by placing iced cookies in the fridge for about 5 minutes.

  • Spread a dollop of your favorite ice cream on one cookie and sandwich with another. Place on a sheet pan and put into the freezer for about 5 to 10 minutes to re harden ice cream before serving. You can also store in the freezer in an airtight container to have for later!
