Strawberries for the red, sugar-free cool whip for the white and blueberries for the blue! Like we mentioned earlier, this dessert is total festive fun!

What You’ll Need

  • Zero Sugar Cool Whip– the perfect no sugar base for this delicious cheesecake salad!
  • Zero Sugar Instant Cheesecake Pudding – all of the cheesecake flavor without more ingredients!
  • Lemon juice– to add that bit of zip normally found in traditional cheesecake flavors.
  • Strawberries and Blueberries- summer fruit that does have some natural sugar but traditionally low glycemic and acceptable as a low sugar option.

Instructions

Just five simple ingredients and 30 minutes to chill get you to a delicious, light and fun summer dessert.

Wash and slice strawberries. Wash and dry blueberries. If you are mixing in the cool whip bowl, remove about a cup for easier mixing.

Add the instant pudding mix to the cool whip.

Drizzle in the lemon juice to the cool whip mixture.

Add the cool whip you took out, back in. Alternatively, you may just mix in a bigger bowl.

Reserve some of the fruit for garnish. Add in sliced strawberries.

And the blueberries. Gently fold them in to mix.

Cover and chill for at least 30 minutes. Garnish with reserved fruit and serve! Or you can freeze it for at least an hour and serve it like a delicious ice cream!

You can simply cover this cheesecake dessert and chill it for a more fluffy, mousse-like consistency, but you can also store it in the freezer and have a delicious texture resembling soft-serve ice cream! Garnish with more strawberries and blueberries for more of the red and the white! Absolutely fabulous!

Substitutions & Variations

With this recipe, I can think of a few customizations to help get you going.

Easy to double – If you need a dessert for a larger crowd, this recipe is easily doubled!
More fruit! – Add more blueberries and strawberries for a little more blue and red, or add whatever color you want with your other favorite fruits! Be sure to wash and prep them as usual.
Cool Whip – There’s not a ton of sugar in Cool Whip, so if you need or want to use the non sugar-free, go for it!

  • 1 oz jello cheesecake instant pudding mix zero sugar
  • 2 tsps lemon juice
  • 4 oz strawberries sliced
  • 1/2 pint blueberries

  • In a large bowl, mix cool whip, instant pudding mix and lemon juice. Mix well to combine. Fold in strawberries and blueberries, reserving some for garnish.
    8 oz cool whip, 1 oz jello cheesecake instant pudding mix, 2 tsps lemon juice, 4 oz strawberries, 1/2 pint blueberries
  • Cover and chill for at least 30 minutes. Garnish and serve chilled. For an even sweeter treat, freeze for at least 1 hour and eat like creamy ice cream.

Pop the lid on your container, and chill it in the fridge for at least 30 minutes to give the pudding mix time to thicken up. Or you can store it in the freezer for at least an hour and have a simulated zero sugar ice cream! Either way it’s a beautiful, delicious dessert!
