I love to cook. I do not love to clean up. Often you will see me mix in a casserole dish to avoid dirtying up another pan. So, for me, recipes like this that are made in one pan are a HUGE time saver. I look at it this way. Every minute I can save cooking or cleaning is an investment in time well spent with my family.

How to Make It
I almost feel bad calling this a recipe. Much like our BEEF PASTA BAKE, this recipe is really about the method in which you put it together. I love it because it is a great example of how to combine flavor and basic proteins together to make a delicious medley of a meal. I think it is a great illustration of how you can combine simple ingredients to make something similar on your own that will become a classic in your house too.
~Ingredients
- 1 pound lean ground beef or Turkey - choose the right protein for you.
- ½ cup chopped onion - the onions add texture and flavor.
- 8 ounces sliced mushrooms - for body and added veggies.
- 2 Tablespoons minced garlic - garlic really enhances the beef or turkey.
- 4 eggs, beaten - a fun addition of more protein.
- 2 cups fresh baby spinach - more good for you green vegetables.
- ¼ teaspoon salt - for flavor and goodness.
- ¼ teaspoon pepper - the spice of life!
- ½ cup grated parmesan cheese - a salty little surprise.
~Method
- Brown meat and drain. Cook onion and mushrooms until' softened.
- Return meat to pan. Season with salt, pepper and garlic.
- Clear space in the middle of pan. Add eggs in that space. Cook eggs until firm, pulling in some meat mixture a little at a time. Mix well once eggs are cooked,
- Add spinach and fold in. Cook until wilted. Remove from heat. Sprinkle with parmesan cheese, Serve and enjoy.
Tips and Tricks
This is a great stand alone dish. You can treat it as such or even pair it with rice or mashed potatoes. It is also great over buttered toast for a real treat.
I love this question! This is the PERFECT thing to make if you are watching your waistline. Lean Ground Turkey is the first thing that makes a difference. Then you can use egg whites instead of whole eggs if you have met your protein intake for the day. Really, other than that, as it is, ground beef too is ok. It will have your healthy fat as long as the beef is 83% lean or higher. The trick is HOW you serve it. I love serving it over Palmini noodles which are made from hearts of palm. Omitting, rice or white potatoes or bread is a great way to get this to a healthy dish
Yes, or substitute with egg white or an egg substitute. They add more protein and help provide a different texture. But like all of our other recipes, make this your own!
