Twice Baked Potato Casserole Recipe

Are you tired of the same old baked potatoes? Today we’re going to show you our take on a TWICE BAKED POTATO CASSEROLE recipe that is completely yummy and so very easy to make. It’s one of those “looks like a lot, but it’s not!” recipes that you’re truly going to be wowed by after you easily get this deliciousness together.

With the baking of the fixings on the top, you’ll get a nice visual, and then the other half inside cooks perfectly and makes sure that everyone around the table gets a nice bite. Perfect! Why eat a basic baked potato when you can throw together a casserole that’s already mixed and has all the things that you love? Perfect again!

Much like our BAKED BUTTERCUP SQUASH CASSEROLE recipe, is one of our favorite casseroles that we make.

Ingredients

Smoky bacon and creamy potatoes combine so well with the cheddar and green onions! This is quite the flavor feast!

What You’ll Need

  • Potatoes – russets are best, washed and baked.
  • Salt and Pepper – easy and powerful spices.
  • Butter– what is a baked potato without it?
  • Heavy cream & sour cream – for the creaminess you expect.
  • Cheddar cheese & green onions– to cap it all off.
  • BACON – I mean, no info needed!

Instructions

This a prime example of a “looks like a lot, but it’s not!” recipe! It’s easier than you think. Let’s go!

Cook potatoes, bacon, drain and set aside. Slice potatoes in half and cool. Melt butter in sauce pan over medium heat.

Scoop out centers of potatoes and set skins aside.

Once butter is melted, add heavy cream to saucepan.

Mix in sour cream. Whisk well to combine.

Add in half of the cheese to cream mixture and melt. Remove from heat.

Season potatoes with salt.

Pour in cream mixture.

Add in half of the crumbled bacon.

Spread in a greased 9×13 baking dish.

Chop reserved potato skins.

Sprinkle over the top.

This recipe seems like there’s lots of prep involved, but there’s really nothing to it. When I make this, Big D always wants to keep it all for himself and comes up with lots of ingenious ways to do that, like saying “This casserole is no good. Let me keep it so that no one else will eat it!” Sneaky! I get it though. It’s so good!

Substitutions

With this recipe, I can think of a few customizations to help get you going.

Potatoes – We love russet potatoes, but red potatoes will work well.
Sour cream – Try some buttermilk instead of the sour cream, if that’s your fave!
Bacon – Turkey bacon can be used for a less fatty option, or you could even use crumbles/bits.

Make ahead of time: This casserole is great to make ahead of time and take along to family functions, events and gatherings
Storage: Place in an airtight container in the refrigerator and enjoy for up 2 to 3 days. Freezes well, too. Mix with our directions, cover and freeze for up to a month.

Twice Baked Potato Casserole Recipe

If you're tired of the same old baked potatoes, our TWICE BAKED POTATO CASSEROLE recipe is easy to make and so yummy. It's one of those "looks like a lot, but it's not!" recipes that you're truly going to love!

Ingredients

  • 4 potatoes baked, see instructions
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter
  • 2/3 cup heavy cream
  • 1/4 cup sour cream
  • 2 cups cheddar cheese grated
  • 6 strips bacon cooked and crumbled
  • 2 green onions diced

Instructions

  • Cook bacon, drain and set aside. Cook potatoes in the microwave about 8 minutes or until fork tender. When cool to the touch, slice in half, lengthwise. Set aside.Preheat oven to 375°

  • In a saucepan over medium heat melt butter. Add in heavy cream and sour cream. Whisk to combine. Add in half of the cheese and stir until melted. Remove from heat.
    1/4 cup butter, 2/3 cup heavy cream, 1/4 cup sour cream, 2 cups cheddar cheese
  • Scoop out most all of the insides of potatoes and place in a bowl, season with salt and pepper. Set the skins aside. Mash the potatoes and add in half of the crumbled bacon, half of the green onions and pour in the cheese and butter mixture. Mix well and pour into a lightly greased 9×13 baking dish.
    1 teaspoon salt, 6 strips bacon, 2 green onions, 1/2 teaspoon pepper
  • Chop up skins and sprinkle over the top. Sprinkle the remaining cheese, bacon and green onions. Bake for about 30 minutes until cheese is melty and browned.

*PRO TIP- feel free to bake potatoes the traditional way in the oven. Usually about 45 minutes. This also freezes well for later. Mix according to directions, cover and freeze for up to a month.

🍴 PRO TIP!

Be sure not to overmix your potatoes once you get going. If you overdo it, they won’t be near as fluffy and will likely be too sticky for ya!

What’s the best potato to use?

We love to use russet potatoes, but red potatoes can also be good, and give you that perfect filling.

Is it ok to use the skins of the potatoes?

Absolutely! They are packed with nutrients and give you that baked potato feel and texture!
