Twice Baked Potato Casserole Recipe

Ingredients

  • 4 potatoes baked, see instructions
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter
  • 2/3 cup heavy cream
  • 1/4 cup sour cream
  • 2 cups cheddar cheese grated
  • 6 strips bacon cooked and crumbled
  • 2 green onions diced

Instructions

  • Cook bacon, drain and set aside. Cook potatoes in the microwave about 8 minutes or until fork tender. When cool to the touch, slice in half, lengthwise. Set aside.Preheat oven to 375°

  • In a saucepan over medium heat melt butter. Add in heavy cream and sour cream. Whisk to combine. Add in half of the cheese and stir until melted. Remove from heat.

  • Scoop out most all of the insides of potatoes and place in a bowl, season with salt and pepper. Set the skins aside. Mash the potatoes and add in half of the crumbled bacon, half of the green onions and pour in the cheese and butter mixture. Mix well and pour into a lightly greased 9x13 baking dish.

  • Chop up skins and sprinkle over the top. Sprinkle the remaining cheese, bacon and green onions. Bake for about 30 minutes until cheese is melty and browned.

*PRO TIP- feel free to bake potatoes the traditional way in the oven. Usually about 45 minutes. This also freezes well for later. Mix according to directions, cover and freeze for up to a month.
