This recipe was inspired by most recent opportunity to attend the ALABAMA PEANUT PRODUCERS ASSOCIATION‘s Farm to Table Harvest tour in September of 2023.

I was fortunate to get to meet some of Alabama’s finest farmers and their families and learn about what it means to farm in our great state. There is so much more to farming that just farm to table. Years of research and development go into our food. For now and for years to come.

Ingredients

For the Peanut Crusted Chicken:

– 1 to 2 pounds chicken breast

– 1 cup peanuts

– 1/2 teaspoon garlic powder

– 1/2 teaspoon onion powder

– 1/4 teaspoon cayenne

– 2 tablespoons butter

– 2 tablespoons avocado oil

For the Sweet and Spicy Peanut Butter Sauce:

– 1/2 cup creamy peanut butter

– 2 tablespoons sesame oil

– 2 tablespoons hot sauce

– 1 to 3 tablespoons water

– 2 tablespoons honey

Step by Step Instructions for Peanut Crusted Chicken

1. Prepare the Peanut Crust:

  Preheat oven to 350. Carefully grind or chop peanuts to the size of breadcrumbs. Place in a shallow dish and set aside.

2. Season and Coat the Chicken:

 Season chicken breasts with garlic, onion and cayenne powder on both sides. Melt butter and oil in a skillet over medium heat.  Coat chicken with reserved chopped peanuts.

3. Sauté the Chicken:

   Carefully place the peanut-crusted chicken breasts into the heated SKILLET. Cook for 2-3 minutes on each side until the crust is golden brown.

4. Finish in the Oven:

Place seared chicken in a baking dish and cover with remainder of chopped peanuts. Bake at 350 for 25 minutes for thick breasts or 15 minutes for thin. Until the internal temperature reaches 165 degrees.

5. Prepare the Peanut Butter Sauce:

While the chicken is cooking, mix peanut butter, sesame oil, hot sauce and honey.

The mixture will be kind of thick. Use the water, one teaspoon at a time to thin to your desired consistency.

6. Serve and Enjoy:

Serve the sauce drizzled over the chicken or on the side to dip! Enjoy!

  • 6 chicken breasts
  • 1 cup roasted peanuts chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 2 tbsp butter
  • 2 tbsp avocado oil

For the Sweet and Spicy Peanut Butter Sauce

  • 1/2 cup creamy peanut butter
  • 2 tbsp toasted sesame oil
  • 2 tsp hot sauce
  • 2 tbsp honey
  • 3 tbsp water

Instructions

  • Preheat oven to 350. Carefully grind or chop peanuts to the size of breadcrumbs. Place in a shallow dish and set aside.
