Our OATMEAL CHOCOLATE CHUNK COOKIES WITH CRANBERRIES are going to be your next go-to cookie recipe! If you love oatmeal cookies, but aren’t a huge fan of raisins, I dare you to try dried cranberries in your next oatmeal cookies! We are going to step things up a notch because these oatmeal cookies have dried cranberries and dark chocolate!

These cookies are fabulous and easy to make! Many folks get intimidated by looking at cookie recipes and thinking “that’s a LOT!” It’s not! You can tailor the size of the cookies for the amount and we use as few ingredients as possible to keep things simple.

Ingredients

We are going to keep this one straightforward, with as few ingredients as possible! Have fun!

What You’ll Need

  • All purpose flour – for a smooth texture.
  • Ground cinnamon – grind your own or prepared are fine.
  • Baking powder, baking soda and salt– the trio of must haves in baking!
  • Butter – softened to just room temp.
  • Brown sugar and white sugar – they both get equal billing for taste and texture.
  • One egg – only one for a binder.
  • Old fashioned oats – not the quick cooking kind.
  • Dried cranberries and Dark chocolate chunks – we add these in the end for a pop of flavor and awesome texture.

Why You Will Love These Oatmeal Chocolate Chunk Cookies with Cranberries

  • Adjustable amount – Use a 1″ cookie scoop for about 2 dozen smaller cookies. Use a 2″ scoop for about a dozen larger cookies! It’s up to you!

Instructions

There are just a few extra steps for these tasty treats, but these cookies are still easy to make!

To a large bowl, add butter, white sugar and brown sugar. Cream until light and fluffy.

Add in one egg.

And vanilla extract. Mix well.

Now for the dry ingredients. Add in all purpose flour.

Add in ground cinnamon and mix until just combined. Do not over-mix.

Fold in dried cranberries.

Mix by hand until well combined.

Notice, we do not flatten these. They will cook to the perfect size.

Bake at 350° for 12-15 minutes. Cool on the pan and then a cooling rack. Enjoy!

Substitutions & Variations

With this recipe, I can think of a few customizations to help get you going.

Cinnamon – Don’t like cinnamon? You can leave it out!
Chocolate – Try milk chocolate or butterscotch chips. Or both!
Flour – Superfine almond flour will work fine in this recipe, if that’s what you have or prefer to use.

Make Ahead and Storage Tips

Make ahead of time: You can prepare your cookie dough 2 to 3 days ahead of time. Just cover it and pop it in the fridge until you’re read to make the cookies.
Storage: You can keep your cookies in a container at room temp for a couple weeks. You can freeze your baked cookies in an airtight container, and even freeze your unbaked dough, both for up to 3 months.

Ingredients

  • 1/2 cup butter unsalted, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 cup dark chocolate chunks
  • 1 cup cranberries dried
  • 2 cups old fashioned oats

Instructions

  • Preheat oven to 350°. In a large mixing bowl, or bowl of stand mixer, combine, butter and both sugars. Mix until creamy and smooth. Add in vanilla and egg and mix well.
    1/2 cup butter, 1/2 cup brown sugar, 1/2 cup white sugar, 1 egg, 1/2 teaspoon vanilla extract
  • To the same bowl, add in flour, cinnamon, salt, baking soda and baking powder. Mix on low to combine, careful to not overmix.
    1 cup all purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 3/4 teaspoon cinnamon
  • Fold in cranberries, chocolate chunks and oats by hand just until combined.
    1/2 cup dark chocolate chunks, 1 cup cranberries, 2 cups old fashioned oats
  • Use a cookie scoop, about 1 to 1.5 inch to scoop out cookies. Place on a parchment lined pan about 2 inches apart. Bake for 12 to 15 minutes until browned around the edges. Cool on the pan for a few minutes before transferring to a cooling rack.

*Pro Tip- using a larger scoop makes a bigger cookie but will cut the overall number in half. So a 2 inch scoop will  make about 12 whereas a 1 inch scoop will double the recipe and you will still be left with a good size cookie!

🍴 PRO TIP!

A good cookie is worth getting your hands dirty for! When you have cookies with inclusions like this, the best way to get them in is to truly do it by hand! This allows for a more gentle mix, so that you aren’t overworking your cookie dough, and lets you feel what’s going on. If you have any dry spots in the bottom of your mixing bowl, you can lift and fold them in.

Can I use quick cooking oats?

You’ll want to use old fashioned oats for this recipe for the best results and chewiest cookies. You can use the quick oats, but be aware that your results may vary.

Can I use salted butter in the recipe?

If that’s what you have on hand, feel free to use it. Just reduce your added salt by about a quarter teaspoon.

How do I know when my cookies are done?

Bake them for 10 to 15 minutes, and keep an eye out for the moment the edges are brown. Once they are nice and brown, your cookies are done and perfectly crispy on the outside and perfectly soft on the inside.
