Oven Baked Sausage Pasta

Ingredients

  • 1 pound smoked sausage cut into bite sized pieces
  • 2 tablespoons minced garlic
  • 1/2 cup chopped onion
  • 14 ounces crushed tomatoes can
  • 2 tablespoons fresh basil or 2 teaspoons dried
  • 1/4 teaspoon red pepper flakes
  • 2 cups rotini dry, cooked according to package directions
  • 1 cup ricotta cheese
  • 1.5 cups mozzarella cheese divided
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup parmesan cheese

Instructions

  • Preheat oven to 400 degrees Fahrenheit. Boil rotini according to package directions, drain and set aside. In a separate bowl, mix ricotta cheese, 1/2 cup of mozzarella and parmesan cheese. Set aside.

  • In an oven safe skillet, brown sausage on low to medium heat until crispy and brown. Remove from pan and drain. Place diced onion in pan drippings and cook until soft. Add minced garlic and cook for 1 minute, taking care not to burn garlic by stirring. Add tomatoes, basil, salt, pepper and red pepper. Mix well. Add sausage in and heat through on low heat.

  • Stir in cooked pasta. Spoon ricotta mixture in dollops throughout and top with remaining 1 cup of mozzarella.
  • Bake for 30 minutes or until top is browned.
  • Cool 5 minutes and enjoy!
