Italian Cauliflower Salad

Ingredients

  • 2 cups Riced Cauliflower raw
  • 1 cup Tomatoes
  • 1.5 Arugula chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup reduced fat Italian dressing
  • Feta Cheese optional

Instructions

  • Prep tomatoes and arugula. 
    1 cup Tomatoes, 1.5 Arugula
  • Add tomatoes, arugula and riced cauliflower to a large bowl.
    2 cups Riced Cauliflower
  • Season with salt and pepper. Mix well. 
    1 teaspoon salt, 1/4 teaspoon pepper
  • Add dressing, mix well and top with crumbled feta cheese.
    1/2 cup reduced fat Italian dressing, Feta Cheese
  • Chill in refrigerator for at least an hour. Serve.
